Bacon-Wrapped Three-Meat Meatloaf with Chicken and Maple Bourbon Sauce

This bacon-wrapped loaf combines a tender beef-and-pork filling with whole chicken breasts, chestnuts and garlic at the center. Soaked bread keeps the filling supple, while maple syrup and bourbon give the sauce a rounded sweetness. Avoid packing the meat too firmly, and use a thermometer in the chicken center before slicing.

This recipe is based on my YouTube video, with a few adjustments since publication. The video produces two loaves; the quantities below make one generous loaf in a standard pan. I have also specified the bread soaking liquid, sauce proportions and doneness checks, because those details matter when reproducing the dish at home. Here, the bourbon goes into the sauce instead of the final flambé shown in the video.

A stuffed loaf for a generous family meal

Meatloaf is ground meat mixed with a binder, shaped and baked until it can be sliced. Here, the three main meats are beef, pork and chicken: the chicken stays in whole pieces inside the ground-meat mixture, with bacon around the outside. This is a substantial centerpiece for a weekend dinner or a shared meal, rather than a quick weeknight loaf.

The exposed bacon browns after the loaf is unmolded, while the pan supports the filling during the first bake. Chestnuts add small, soft pieces throughout the slices. For a simpler ground-beef version without the chicken center or bacon wrapping, my juicy homemade meatloaf follows a different approach.

I make it this way because the bacon provides a ready-made lining and the breast meat gives each slice a distinct center. That presentation depends on evenly sized chicken pieces and a continuous layer of filling around them. Leaving gaps beside the chicken makes the slices more likely to separate.

Ingredients and the texture they provide

The measured list in the recipe card makes one loaf for eight generous portions. Use equal amounts of ground beef and ground pork, two modest chicken breasts, regular-cut bacon, fresh white bread, milk, maple syrup, bourbon, peeled cooked chestnuts, garlic, salt and pepper. The sauce uses prepared demi-glace, a little bourbon, maple syrup and water as needed.

Choose ground beef with about 15 to 20 percent fat rather than the leanest available. Pork and bacon contribute additional richness, so this is hearty comfort food, not a light meatloaf. No egg is required in this version. The soaked bread and a cohesive meat mixture supply the binding; adding several eggs would change the texture and proportions.

Use plain bread, including its soft crust, and weigh it when possible. Two large slices may weigh considerably more than two thin sandwich slices. The milk, bourbon and maple syrup should soften the cubes into a mash without leaving a puddle. If the bread is unusually dry, add milk a tablespoon at a time rather than pouring in an extra cup.

Cooked chestnuts are essential here. Raw chestnuts will not become reliably tender inside the loaf during this bake. Trim away any hard pieces, and break large chestnuts in half so they distribute more evenly. Slice the garlic instead of leaving very large cloves whole.

Prepared demi-glace varies greatly in strength and salt. My brown stock technique explains the underlying base, while neutral brown veal stock offers another starting point. Neither unreduced stock nor a spoonful of concentrated paste is a direct one-for-one replacement for prepared demi-glace.

Assemble and cook the meatloaf

1. Soften the bread

Heat the oven to 350°F. Cut the bread into small cubes and mix with the milk, maple syrup, bourbon, salt and pepper. Let it stand for about five minutes, then mash with your fingers or a fork. What I look for here is thoroughly softened bread with no dry centers and no free liquid at the bottom of the bowl.

2. Mix the beef and pork

Keep the ground meats cold. Add the bread mixture and fold everything together until the seasoning and bread are evenly distributed and the filling holds together. Stop once it is cohesive; prolonged kneading can produce a tight, springy slice. Cook a small pinch in a pan to check seasoning, especially if your bacon is particularly salty. Do not taste the raw mixture.

3. Line the pan with bacon

Set a 9-by-5-inch metal loaf pan, at least 3 inches deep, on a rimmed baking sheet. Lay bacon crosswise with a slight overlap, leaving enough overhang to fold over the top. Line the ends too. Regular-cut bacon bends easily and browns more readily than thick-cut strips. The baking sheet catches drips when the fat renders.

4. Add the chicken and filling

Spread about one-third of the filling across the bottom and slightly up the sides. Distribute half the chestnuts and garlic over it. Pat the chicken dry, remove loose tenderloins if needed, and arrange the breasts lengthwise, head to tail, with the thick ends in opposite directions. Tuck any small tenderloins alongside, rather than stacking them into a thick mound.

Add the remaining chestnuts and garlic. Cover with the rest of the filling, working it gently into the spaces beside the chicken. Leave a little headroom and fold the bacon over the surface. If your pan is smaller or the breasts are unusually large, bake the excess filling separately; do not force everything into an overflowing pan.

5. Bake and expose the bacon

Bake for about 60 minutes, then check the temperature in the thickest part of the chicken and the surrounding filling. Continue cooking as needed. Once the loaf is firm enough to lift safely and is approaching doneness, carefully pour off the accumulated fat into a heatproof container. Unmold onto the rimmed sheet with the previously covered bacon facing upward, and bake for another 10 to 20 minutes to brown it.

The total baking time will often be 75 to 95 minutes, but pan material, breast thickness and the starting temperature can shift that range. Both the chicken center and the nearby filling must reach 165°F. Check several places. A browned bacon surface or clear-looking juices cannot replace the thermometer. If the bacon is coloring too quickly, cover loosely with foil while the center finishes.

6. Finish the sauce and slice

While the loaf finishes, simmer the sauce bourbon in a small saucepan for about two minutes, then add the prepared demi-glace and maple syrup. Stir until smooth and gently reduce until it lightly coats a spoon. Add water a tablespoon at a time if it becomes too thick. Taste before adding any salt, since the demi-glace and bacon already supply plenty.

Rest the finished loaf for 15 minutes before cutting thick slices with a sharp knife. I prefer to serve the sauce around or alongside the meat, so the bacon remains visible. Spoon off excess fat rather than incorporating all of the pan drippings into the sauce. This sauce is savory with a small maple note, not a sticky glaze.

Sides and other dishes to try

In the video, fennel, carrots and potatoes are cooked separately before being browned in garlic butter; cherry tomatoes receive a brief sauté. Do not assume those raw vegetables will cook underneath the loaf in the same time. Prepare your chosen sides independently and finish them while the meat rests.

For a softer accompaniment, homemade mashed potatoes catch the sauce well. Air-fryer roasted potatoes offer a separate crisp option, and creamy coleslaw gives the rich meat a cool, tangy partner.

If you enjoy the beef-and-pork combination, Swedish-style meatballs and a homemade meatball sandwich use ground meat in smaller portions. For a tomato-based dinner, try beef meatballs in tomato sauce. A cognac mushroom sauce is another sauce style to explore separately, rather than adding cream and mushrooms to the maple sauce without adjusting it.

Substitutions

Regular smoked bacon can replace maple-smoked bacon; the maple syrup still supplies that flavor. For an alcohol-free version, replace the bourbon in the bread mixture with the same amount of milk, and omit the sauce bourbon, using a little water to adjust consistency. The flavor will change. Brief simmering does not make a bourbon sauce reliably alcohol-free.

Chestnuts can be omitted if unavailable, leaving the meat quantities unchanged. Do not substitute raw nuts by volume. If you prefer an unstuffed loaf, use a recipe designed for that format rather than replacing the whole chicken breasts with extra ground meat and keeping the same baking time. For smaller poultry portions, baked turkey meatballs provide a different option.

Questions about the chicken center and bacon

Why can the chicken stay pale while the filling looks pink?

Chicken, ground meat and smoked bacon can show different colors after cooking. The appearance of the cut face is not a dependable safety test. Check the center and filling before removing the loaf from the oven, aiming for 165°F in each.

Can I prepare it ahead?

Assemble, cover and refrigerate the raw loaf for up to one day. Bake directly from the refrigerator and expect additional time. Keep the sauce separate. Use the thermometer rather than extending the cooking time by a fixed number of minutes.

How do I keep the slices together?

Mash the soaked bread well, fill the spaces around the breasts and let the cooked loaf rest before cutting. A very thin slice is more fragile because it crosses several different ingredients. Cut roughly 1-inch slices and support them with a broad spatula.

What should I do with leftovers?

Refrigerate in shallow containers within two hours and use within two to three days. Reheat covered slices with a little sauce or water until they reach 165°F. Freeze cooled portions promptly if you will not eat them within that period.
