Creamy Mushroom Chicken Thighs: Easy One-Pan Dinner with a Rich Garlic Cream Sauce

Creamy mushroom chicken thighs are a cozy one-pan chicken dinner made with seared chicken, browned mushrooms, garlic, shallots, cream, and a simple pan sauce. What makes this version different is the way the mushrooms are cooked first until golden, so the sauce tastes deep and savoury instead of flat or watery. It is the kind of recipe I make when I want something comforting enough for a cold evening, but still easy enough for a weeknight dinner in Canada or the USA.

Creamy Mushroom Chicken Thighs: Easy One-Pan Dinner with a Rich Garlic Cream Sauce

This recipe is based on my YouTube video, with a few adjustments since publication. I make it this way because chicken thighs stay juicy, the skin gives flavour to the pan, and mushrooms need direct heat before adding cream. I prefer to build the sauce in the same pan instead of making a separate sauce because all the browned bits from the chicken give the cream more character.

This creamy mushroom chicken is different from my creamy garlic and mushroom chicken because this version focuses more specifically on chicken thighs and a thicker pan sauce. It is also different from creamy lemon garlic chicken because there is no bright lemon finish here. This one is deeper, earthier, and more mushroom-forward. If you want a stronger mustard flavour, one-pan Dijon mustard chicken is the better choice, but for a classic creamy mushroom sauce, this is the one to make.

Why This Creamy Mushroom Chicken Works

The secret is not the cream. The secret is browning.

Mushrooms release a lot of water when they hit the pan. If you add cream too early, they boil instead of brown, and the sauce becomes pale and weak. I prefer to cook the mushrooms first with a little butter and oil until they shrink, caramelize, and take on a golden colour. That step gives the sauce its real flavour.

The chicken thighs are seared skin-side down first. This renders some of the fat, crisps the skin, and leaves flavour in the pan. Then the shallots and garlic go in, followed by a small amount of white wine or chicken stock to lift the browned bits. After that, cream turns everything into a rich sauce.

This recipe is hearty comfort food with good protein from the chicken and richness from the cream. It is not a light salad-style meal, but it is a satisfying homemade dinner that can be balanced with vegetables, rice, potatoes, or a simple salad.

Ingredients

For the chicken:

8 bone-in, skin-on chicken thighs
1 1/2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
1 tablespoon olive oil
1 tablespoon butter

For the mushroom cream sauce:

12 oz mushrooms, sliced
1 large shallot, finely chopped
3 cloves garlic, minced
1 tablespoon butter
1/2 cup dry white wine or chicken stock
1 cup heavy cream
1/2 cup chicken stock
1 teaspoon Dijon mustard
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
1/4 cup grated Parmesan, optional
1 tablespoon chopped parsley
Salt and black pepper, to taste

Step-by-Step Instructions

1. Season the chicken

Pat the chicken thighs very dry with paper towel. This helps the skin brown instead of steaming. Season both sides with salt, black pepper, paprika, and garlic powder.

Let the chicken sit at room temperature for 10 to 15 minutes while you slice the mushrooms and prepare the sauce ingredients. This small rest helps the seasoning stick and gives the chicken a better sear.

2. Sear the chicken thighs

Heat olive oil and butter in a large skillet over medium-high heat. Place the chicken thighs skin-side down and let them cook without moving them for 6 to 8 minutes, or until the skin is golden.

Turn the chicken over and cook the second side for 3 to 4 minutes. The chicken does not need to be fully cooked yet. Transfer it to a plate and keep the pan on the heat.

If there is too much fat in the pan, spoon out a little, but leave enough behind to cook the mushrooms.

3. Brown the mushrooms

Add the sliced mushrooms to the same pan. Cook them over medium-high heat for 7 to 10 minutes, stirring occasionally. Do not rush this step. At first, the mushrooms will release moisture. Keep cooking until the liquid evaporates and the mushrooms begin to brown.

Add 1 tablespoon of butter near the end to give the mushrooms a richer flavour. Season lightly with salt and black pepper.

4. Add shallots and garlic

Reduce the heat to medium. Add the chopped shallot and cook for 2 minutes, until softened. Add the garlic and thyme, then cook for 30 seconds. Garlic burns quickly, so it should only cook long enough to become fragrant.

5. Deglaze the pan

Pour in the white wine or chicken stock. Scrape the bottom of the pan with a wooden spoon to release the browned bits. Let the liquid reduce by about half.

This is where the sauce starts to taste like a real pan sauce instead of just cream poured over chicken.

6. Build the cream sauce

Add the chicken stock, heavy cream, and Dijon mustard. Stir everything together and bring the sauce to a gentle simmer.

Add the Parmesan if using. It helps thicken the sauce slightly and gives it a savoury finish. Taste the sauce and adjust with salt and black pepper.

7. Finish cooking the chicken

Return the chicken thighs to the pan, skin-side up. Spoon a little sauce around the chicken, but try not to cover the crispy skin completely.

Reduce the heat to medium-low, cover partially, and simmer for 15 to 20 minutes, or until the chicken is fully cooked and tender. The internal temperature should reach 165°F.

If the sauce becomes too thick, add a splash of chicken stock. If it is too thin, simmer uncovered for a few extra minutes.

8. Garnish and serve

Sprinkle with chopped parsley and serve hot. This creamy mushroom chicken is excellent with rice, mashed potatoes, roasted vegetables, pasta, or crusty bread for the sauce.

What to Serve with Creamy Mushroom Chicken Thighs

This recipe makes a rich sauce, so it works best with sides that can catch it.

For a classic comfort plate, serve it with homemade mashed potatoes or traditional gratin dauphinois. Both pair naturally with creamy sauces and chicken thighs.

For something simpler, fluffy rice pilaf is a great choice because it absorbs the mushroom sauce without competing with it. If you want vegetables on the side, serve this with oven-roasted mixed vegetables or air fryer Brussels sprouts.

For a chicken dinner menu, this recipe fits well beside other creamy chicken dishes like creamy Cajun chicken with lime,Marry Me chicken, and creamy Roquefort chicken. For a broader chicken collection, add it to your rotation with easy oven-baked chicken thighs and oven-baked chicken recipes.

Substitutions

Chicken thighs

Bone-in, skin-on chicken thighs give the best flavour and texture. Boneless thighs also work, but they cook faster. Start checking them after 10 to 12 minutes in the sauce.

Chicken breasts can be used, but they are leaner and easier to overcook. For a lighter chicken breast option, juicy air fryer chicken breast is a better fit.

Mushrooms

Cremini mushrooms are ideal because they have more flavour than white mushrooms. White button mushrooms work too. For a deeper flavour, use a mix of cremini, shiitake, and oyster mushrooms.

Cream

Heavy cream gives the most stable sauce. Half-and-half can work, but the sauce will be thinner and more likely to split if boiled. Keep the heat gentle.

White wine

Dry white wine adds acidity and depth, but chicken stock is a good alcohol-free option. Do not use sweet wine.

Parmesan

Parmesan is optional. It adds savoury flavour and helps thicken the sauce, but the recipe still works without it.

FAQ

Can I make creamy mushroom chicken thighs ahead of time?

Yes. Cook the recipe, let it cool, and store it in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat with a splash of chicken stock or cream to loosen the sauce.

Can I freeze creamy mushroom chicken?

You can freeze it, but cream sauces may separate slightly after thawing. For the best texture, refrigerating is better than freezing. If you do freeze it, reheat slowly and whisk the sauce gently.

How do I keep the chicken skin crispy?

The skin is crispiest right after searing. Once the chicken simmers in the sauce, it will soften slightly. To keep more texture, leave the chicken skin-side up and avoid covering the skin with sauce.

Can I make this without wine?

Yes. Replace the wine with chicken stock. Add a small splash of lemon juice at the end if you want a little brightness.

What mushrooms are best for creamy chicken?

Cremini mushrooms are the best everyday choice. They brown well, have good flavour, and are easy to find in Canada and the USA. A mixed mushroom blend also works if you want a more restaurant-style sauce.

How do I know when chicken thighs are cooked?

Use a thermometer. Chicken thighs are safe at 165°F, but they become more tender when cooked slightly longer. For juicy, tender thighs, aim for 170°F to 180°F if using bone-in thighs.
