Easy Cottage Cheese Noodles with Egg Noodles (15-Minute Recipe)

These cottage cheese noodles are a fast, creamy comfort-food dinner made with wide egg noodles, cottage cheese, sour cream, butter, and chives. The key is to add the cheese mixture off the heat so the cottage cheese stays soft and creamy instead of turning watery or rubbery, giving you tender noodles coated in a lightly tangy sauce in about 15 minutes.

What Makes These Cottage Cheese Noodles Different

This is a simple cottage cheese noodles recipe built around wide egg noodles rather than regular spaghetti or a blended cheese sauce. The cottage cheese stays visible in small creamy curds, while sour cream and a little butter help it coat the noodles.

I make it this way because cottage cheese can become thin when it is aggressively heated. Boiling the noodles first, removing the pot from direct heat, and then folding in the cheese gives you a much better texture.

It is also quite different from my creamy cottage cheese Alfredo pasta. That recipe turns cottage cheese into a smooth sauce. Here, the texture of the cottage cheese is part of the dish.

These noodles work as a quick meatless dinner, a substantial side dish, or a base for bacon, sautéed onions, vegetables, or leftover chicken. The combination has similarities to several Central and Eastern European noodle dishes, but this version uses ingredients that are easy to find in Canadian and American supermarkets.

The mistake to avoid is pouring cold cottage cheese into a scorching-hot empty pan. The residual heat from freshly drained noodles is enough.

Ingredients You Need

Wide egg noodles: Their broad, tender surface catches the cottage cheese particularly well. Other noodles work, but egg noodles are the best match for the search-friendly, classic egg noodles with cottage cheese style of this dish.

Cottage cheese: I prefer regular cottage cheese rather than fat-free. The extra richness gives the noodles a smoother texture and prevents the sauce from tasting dry.

Sour cream: Just enough to loosen the cottage cheese and help everything coat the noodles.

Butter: Melted into the hot noodles before the cheese goes in. It adds flavor and keeps the noodles from sticking together.

Chives or green onions: They cut through the richness without dominating the cottage cheese.

Garlic powder: A small amount gives the dish more depth while keeping the flavor mild.

Salt and black pepper: Cottage cheese brands vary considerably in saltiness, so taste before adding the final salt.

Step-by-Step Instructions

1. Cook the egg noodles

Bring a large pot of well-salted water to a boil. Add the egg noodles and cook according to the package directions until tender but not mushy.

Egg noodles cook quickly, so start checking them about a minute before the suggested cooking time. What I look for here is a noodle that bends easily but still has enough structure to hold its shape when stirred.

Before draining, reserve about 1/2 cup of the cooking water.

2. Butter the hot noodles

Drain the noodles thoroughly and return them to the warm pot. Do not rinse them.

Add the butter immediately and toss until it melts and lightly coats the noodles.

This small step matters. If you add everything at once, the cottage cheese has to do all the work of coating dry noodle surfaces. Butter creates a smoother base first.

If you like egg-noodle dinners, the same type of noodle also works especially well in my beef Stroganoff with egg noodles.

3. Fold in the cottage cheese mixture

Turn off the heat.

Add the cottage cheese, sour cream, garlic powder, black pepper, and most of the chives. Fold gently until everything is evenly distributed.

Do not vigorously boil the cottage cheese after adding it.

At this point, the noodles should look creamy but not soupy. You should still see small pieces of cottage cheese throughout the pasta.

If the mixture seems a little tight, add reserved noodle water 1 tablespoon at a time. Usually only a small splash is needed.

4. Taste and finish

Taste before adding additional salt. Depending on the cottage cheese, you may need very little.

Spoon the noodles into warm bowls and finish with the remaining chives and freshly ground black pepper.

For a richer dinner, these can sit beside something like creamy steak pasta with mushrooms as an alternative pasta idea, while my creamy tomato chicken pasta is better when you want a full chicken-based meal.

Chef Tips for Better Noodles and Cottage Cheese

Use wide egg noodles if possible. Thin noodles can disappear under the cottage cheese, while very firm pasta shapes change the character of the recipe.

Do not overcook the noodles. Cottage cheese and sour cream soften the pasta further once everything is mixed, so mushy noodles become noticeably heavy.

Keep the sauce loose. Cottage cheese noodles naturally thicken as they sit. A tablespoon or two of hot noodle water can make a surprisingly large difference.

I also prefer adding the chives at the end rather than cooking them. Their fresh onion flavor gives this otherwise mild dish some contrast.

If you want a pasta with more vegetables built directly into the sauce, try the creamy beef pasta with tomato, spinach, and Parmesan.

What to Serve With Cottage Cheese and Noodles

Because these noodles are creamy and fairly mild, vegetables with some texture or acidity work well beside them.

A crisp homemade Caesar salad gives you a fresh contrast. For something warm, broccoli gratin turns the meal into heavier comfort food.

You can also serve a smaller portion of the noodles alongside chicken or beef instead of using them as the main course.

If pasta is the main meal, another option for a lighter side is my Greek farfalle pasta salad with feta and olives, although I would serve smaller portions of each since both contain pasta.

Storage and Reheating

Store leftover noodles with cottage cheese in an airtight container in the refrigerator.

When reheating, use low heat and add a spoonful of water or milk. High heat can cause the dairy to separate and make the noodles oily around the edges.

A microwave works too. Heat in short intervals and stir between each one rather than trying to make the entire bowl piping hot at once.

These noodles are best when freshly made because egg noodles continue absorbing moisture as they sit.

Substitutions

You can replace wide egg noodles with another short or medium pasta, although the texture will be different. If you want to make the pasta itself, my fresh pasta with tomato sauce shows the basic homemade-pasta approach.

Greek yogurt can replace the sour cream for a tangier finish. Use a thick yogurt so the noodles do not become watery.

Chopped parsley can replace chives. Green onions are another good option and give the dish slightly more bite.

For a savory variation, add cooked bacon, sautéed onions, peas, mushrooms, or spinach. These are additions rather than requirements, and I would keep the base simple the first time so the cottage cheese remains the main flavor.

If you have cottage cheese left in the container, it also works well in a garlic and herb cottage cheese dip rather than letting the remainder sit in the refrigerator.

FAQ

What are cottage cheese noodles?

Cottage cheese noodles are cooked noodles tossed with cottage cheese and usually a small amount of butter or another creamy ingredient. Egg noodles are especially common because their soft texture pairs well with the cottage cheese.

Can I use egg noodles with cottage cheese?

Yes. In fact, egg noodles and cottage cheese are an especially good combination. Wide egg noodles provide enough surface area for the cottage cheese mixture to cling to without needing a heavy sauce.

Should cottage cheese be blended for this recipe?

No. Keeping it unblended is what separates this dish from cottage-cheese Alfredo. The small curds give the noodles their characteristic texture.

Why did my cottage cheese noodles become watery?

The noodles may have been too wet after draining, or the cottage cheese may have been heated too aggressively. Drain the pasta well and fold the dairy in after turning off the burner.

Can I make cottage cheese noodles without sour cream?

Yes. Replace the sour cream with a little more cottage cheese and loosen the mixture with reserved noodle water as needed. The result will be slightly less rich and tangy.

Can I add meat?

Yes. Bacon is particularly good with cottage cheese and noodles. Diced chicken or leftover beef can also turn the dish into a more substantial dinner.
