Cranberry Brie Puff Pastry Bites for an Easy Holiday Appetizer

Cranberry brie puff pastry bites bring together crisp pastry, creamy cheese, and a little tart cranberry sauce. These small open parcels bake on a sheet pan, so there is no need for a miniature muffin tin. The corners fold inward around the filling while leaving the cranberry visible in the middle. Serve them warm after a short rest, when the pastry is crisp and the cheese is soft without being dangerously hot.

Keep the filling small and the pastry cold

The balance is simple: a small piece of brie and one teaspoon of thick cranberry sauce for each square. Adding more does not automatically make a better bite. Too much cheese escapes over the edges, and too much sauce can soften the centre before the pastry finishes baking. This batch makes twenty-four small parcels from one pound of puff pastry.

Choose a pastry made with butter if that is your preference, but follow the thawing instructions on its package. Some brands come in two folded sheets and others in a single roll. The important point is the final thickness and total amount, not the number of sheets. Keep the unused portion in the refrigerator while shaping the first batch, particularly if the kitchen is warm.

I like the contrast between tart fruit and a mild, creamy brie. A very ripe cheese can be stronger and runnier than expected. Use a reasonably firm wheel that slices cleanly while cold. The edible rind stays on; it gives the little pieces structure and contributes flavour. My breaded fried brie is another way to serve warm cheese, with a different coating and cooking method.

Use a thick cranberry sauce

The sauce should sit on a teaspoon instead of immediately running off it. Both a thick whole-berry sauce and a smooth sauce can work, provided they are cold. Stir a whole-berry version so each portion receives a little fruit and sauce. If a homemade batch looks watery, reduce it separately, cool it completely, and then measure the amount needed.

My cranberry sauce can be prepared ahead for this purpose. Do not put warm sauce on cold puff pastry, because it softens the butter layers before baking. Plain raw cranberries are not a direct replacement: they will not form the same cohesive spoonful during the short baking time. Dried cranberries give a different result too, with much less moisture and a chewy texture.

These are savoury appetizers with a sweet-tart accent, not small jam tarts. There is no honey drizzle in the base recipe. If you add one at the table, do so sparingly and consider that the sauce already contains sugar. A little fresh thyme after baking is enough to give the cheese a gentle herbal note without burying the cranberry flavour.

Cut even squares without compressing the edges

Lightly flour the board and roll the pastry to about one-eighth inch thick. Aim for a twelve-by-eighteen-inch rectangle and cut four columns by six rows, making twenty-four three-inch squares. Keep the stated portion count consistent when dividing the cheese and sauce. The dimensions are approximate: pastry brands vary in thickness, but each square needs enough dough around its filling to form the raised sides.

Use a sharp knife or pizza cutter and cut straight down without dragging repeatedly across the same line. Crushed edges have more difficulty separating into visible layers. Lift the squares carefully onto parchment-lined baking sheets, leaving about an inch between them. A little irregularity at the corners is fine; the squares do not need to look factory-made.

If your package shape makes one large rectangle awkward, roll two pieces to nine by twelve inches and cut each into twelve squares. Use only a light dusting of flour, brushing away excess before adding the filling. Too much flour makes the surface dry and reduces the contact where the corners meet. If the pastry pulls back strongly, let it relax in the refrigerator before rolling again.

Fill and fold the parcels

Cut the cold brie into twenty-four pieces, about one-third ounce each. Set one piece in the centre of each pastry square and top with a level teaspoon of cranberry sauce. Bring the four corners inward and pinch neighbouring folds lightly around the filling, leaving a small opening at the top. Do not pull the dough tight against the cheese; it needs space to rise.

The shape is an open parcel rather than a sealed envelope. Some cheese may show through the centre after baking, and an occasional small leak is normal. Large amounts of filling spreading over the tray usually mean the parcel was overloaded or its sides were too flat. Keep the filling central and make the folds before the pastry becomes limp.

Brush the exposed pastry lightly with egg beaten with one teaspoon of water. Avoid flooding the cut edges, since a thick coating can glue the layers together. Chill the shaped bites for fifteen minutes while the oven finishes heating. I use that pause to clear the board and make space for the hot trays, rather than leaving the filled pastry sitting beside a warm stove.

Bake until the base is cooked

Bake at 400°F for eighteen to twenty-three minutes. The corners should rise and turn golden brown. Lift one carefully with a thin spatula to check that the underside is golden rather than pale and damp. The cheese can melt before the pastry is cooked, so bubbling cheese alone is not the signal to take the tray out.

If using two trays at once, place them in the upper and lower thirds and swap their positions halfway through. Leave enough room for hot air to circulate. Alternatively, bake one tray at a time and keep the second refrigerated. The second batch may need a slightly different time because the oven has been opened and the pan temperature can differ.

Allow five minutes on the tray before transferring to a serving plate. The hot cheese and fruit retain heat longer than the outer pastry. I prefer a short cooling rest to serving them straight from the oven. Add the thyme leaves at this point; exposed herbs added before baking can become dry and bitter.

Build an appetizer spread

Offer a few contrasting dishes alongside the pastry. Classic deviled eggs provide a cold option, and creamy hummus works with vegetables. Cottage cheese stuffed mushrooms add a vegetable-based baked bite. For another pastry choice, consider spinach and goat cheese parcels or cheese straws.

My spinach and goat cheese pastry video is a related demonstration of handling and folding puff pastry; it is not this cranberry-brie recipe. For a sweet finish later in the meal, apple turnovers use the same kind of pastry differently. Extra cranberries can also go into cranberry-orange muffins or cranberry-orange scones, following those recipes’ own fruit quantities.

Prepare ahead and reheat

Assemble the unbaked parcels up to four hours ahead, cover loosely, and refrigerate. Brush with egg shortly before baking if preparing in advance. They taste crispest the day they are baked. Refrigerate leftovers within two hours and use within three days. Reheat on a tray at 350°F until hot throughout, roughly eight to twelve minutes; cover loosely if the corners darken. A microwave warms the filling but softens the pastry, so the oven is preferable.

  • 1 large egg
  • 1 teaspoon water
  • 1 teaspoon fresh thyme leaves
  • A little all-purpose flour for rolling

Instructions

  • Roll pastry about 1/8 inch thick into a 12-by-18-inch rectangle, or two 9-by-12-inch rectangles. Cut into 24 squares, approximately 3 inches each.
  • Arrange on two parchment-lined baking sheets with space between. Put one piece of brie and 1 teaspoon cranberry sauce in each centre.
  • Fold four corners inward, pinching neighbouring folds lightly to form open parcels. Leave a small opening over the filling.
  • Beat egg with water. Brush exposed pastry lightly, avoiding cut edges. Chill 15 minutes. Heat oven to 400°F.

  • Rest 5 minutes, add thyme, and serve warm.

Notes

One serving is one bite. Allow 15 minutes chilling and 5 minutes resting in addition. Sauce must be thick and cold. Keep assembled unbaked parcels refrigerated up to 4 hours. Refrigerate cooked leftovers within 2 hours and use within 3 days. Calories are approximate and depend on pastry brand.
