What Makes These Burgers Different

This is a three-burger recipe built from one simple beef mixture. Instead of assembling the same cheeseburger three times, each patty gets a different treatment, so everyone at the table can try a different combination.

The cheddar version has finely grated cheese mixed directly into the beef, with more melted over the top. The Emmental version keeps the patty plain and melts the cheese over the bun under the broiler. The Roquefort version uses a controlled amount of blue cheese in both the mayonnaise and the topping.

I make them this way because each cheese behaves differently. Cheddar can be folded into the meat without disappearing completely. Emmental melts evenly and browns nicely under the broiler. Roquefort has a much stronger flavour, so it needs to be used more carefully.

This version is quicker and more direct than a cheeseburger with homemade maple ketchup, and it is different from a Juicy Lucy with cheese sealed inside the patty. It also stays closer to a classic hamburger than a raclette patty melt with cognac-style sauce.

Ingredients You Need

Use ground beef with approximately 15 to 20 percent fat. Very lean beef can become dry before it reaches a safe temperature, while fattier beef stays juicier and browns more easily.

One pound of beef makes three patties of a little over 5 ounces each. Shape them slightly wider than the buns because they will shrink in the pan.

Step-by-Step Instructions

1. Prepare One Batch of Mayonnaise

Place the pasteurized egg, Dijon mustard, vinegar, Cajun seasoning, black pepper and neutral oil in a tall, narrow container.

Set the immersion blender directly on the bottom. Blend without lifting it for several seconds. You should see a thick, pale mayonnaise forming around the blade. Once the bottom has emulsified, slowly lift the blender through the oil.

What I look for here is a mayonnaise that holds a soft peak when the blender is lifted. If it still looks oily, return the blender to the bottom and blend again before moving it.

Measure about 1/4 cup of mayonnaise into a small bowl. Stir in about 2 teaspoons of crumbled Roquefort. Keep the remaining mayonnaise plain and refrigerate both sauces while you prepare the burgers.

The recipe makes more mayonnaise than three burgers require. Store the extra in a covered container in the refrigerator and use it within two days.

2. Season and Divide the Beef

Place the ground beef in a bowl and add the Cajun seasoning and black pepper. Add salt only when the Cajun blend is salt-free.

Mix gently with your fingers until the seasoning is distributed. Do not knead, squeeze or repeatedly compress the meat. Overworking ground beef produces a firm, springy texture.

Divide the meat into three equal portions.

Mix about half of the grated cheddar into one portion. Leave the other two portions plain. The cheddar should be spread throughout the meat without being mashed into a paste.

3. Shape Thin, Even Patties

Shape each portion into a round patty approximately 1/2 inch thick. Make them a little wider than the buns.

Press a shallow indentation into the centre of each patty with your thumb. This helps limit the rounded dome that can form as the meat contracts.

I prefer to shape the patties on a plate or piece of parchment instead of passing them repeatedly between my hands. The less the meat is handled, the more tender the burgers remain.

Refrigerate the patties briefly if they have become warm or soft.

4. Cook the Burgers Safely

Heat a large skillet over medium-high to high heat. Add a thin film of neutral oil if the pan is not naturally nonstick.

The pan is ready when the patties make a strong, immediate sizzle. Place all three in the skillet without crowding them.

Cook for approximately 2 to 3 minutes on the first side. Do not press down repeatedly with the spatula. You know the first side is ready when the bottom is well browned and the cooked colour has moved partway up the edges.

Flip the patties and continue cooking for another 2 to 3 minutes. Place the remaining cheddar over the cheddar patty and most of the remaining Roquefort over the blue cheese patty.

Cover the pan briefly to trap heat and soften the cheese. The cheddar should look glossy and relaxed around the edges. Roquefort softens rather than stretching like mozzarella.

Ground beef must reach 160°F in the centre. Insert an instant-read thermometer horizontally through the side of the thickest patty. If it has not reached temperature, lower the heat slightly and continue cooking.

5. Toast the Buns and Melt the Emmental

Spread the cut surfaces of the buns lightly with softened butter.

Toast the cheddar and Roquefort buns cut-side down in a clean skillet until golden. The surface should feel lightly crisp but remain soft underneath.

Place the Emmental over the cut side of the third top bun. Set it under the broiler until melted and lightly browned. Watch it continuously. Thin cheese can go from melted to scorched very quickly.

The Emmental should bubble gently and reach the edges of the bread without becoming dry or oily.

6. Assemble the Three Versions

For the cheddar burger, spread plain mayonnaise on the bottom bun. Add lettuce, the cheddar-filled patty, tomato and the top bun.

For the Roquefort burger, spread the blue cheese mayonnaise over the bottom bun. Add lettuce, the Roquefort-topped patty, tomato and the top bun.

For the Emmental burger, spread plain mayonnaise over the bottom bun. Add lettuce, the plain beef patty and tomato. Finish with the Emmental-covered bun.

Serve immediately. The buns should still be warm, the cheese soft and the patties juicy but fully cooked.

Chef Notes for Better Burgers

Do not automatically salt the beef before checking the Cajun seasoning. Roquefort, cheddar and many spice blends already contain enough salt to season the finished burger.

Keep the cheddar pieces small. Large cubes mixed into the beef can melt out, stick to the pan and leave empty spaces in the patty.

Do not use the original 45-second cooking time unless the beef has been formed into very thin smash-style patties. A standard 5-ounce patty normally needs several minutes and must reach 160°F.

Use moderate amounts of sauce. A thick layer of mayonnaise can make the bun slide and cover the difference between the three cheeses.
