Easy Garlic Butter Chicken Drumsticks in the Oven

Garlic butter chicken drumsticks are oven-baked chicken legs coated with melted butter, fresh garlic, herbs, and simple seasoning. The result is juicy chicken with crispy edges, rich garlic flavor, and a buttery pan sauce that works for a weeknight dinner, a Sunday meal, or a casual family supper any time of year.

Garlic Butter Chicken Drumsticks

This recipe is based on my YouTube video, with a few small adjustments since publication to make the seasoning more balanced, the skin crispier, and the garlic butter easier to spoon over the chicken while it bakes. I make it this way because drumsticks need enough heat to brown properly, but enough time in the oven for the meat near the bone to become tender and juicy. I prefer to start with a simple seasoning base, then finish with garlic butter so the garlic stays flavorful instead of burning too early.

This is different from my crispy oven-baked chicken drumsticks because the focus here is not only crispy skin. This version is richer, more aromatic, and built around garlic butter. It is also different from honey garlic chicken because there is no sweet glaze. The flavor is more savoury, buttery, and roasted. It is also not a creamy chicken dish like creamy lemon garlic chicken, so it stays lighter on the plate while still feeling comforting.

Why This Garlic Butter Chicken Works

The secret is to season the drumsticks first, roast them until the skin starts to tighten and brown, then brush or spoon garlic butter over them during the second part of cooking. If garlic goes into a hot oven for too long from the beginning, it can turn bitter. By adding the garlic butter once the chicken has already started roasting, the garlic becomes fragrant and golden without taking over the whole dish.

Chicken drumsticks are naturally a good choice for this kind of recipe because they stay juicy and are usually budget-friendly in Canada and the USA. They are also protein-rich and satisfying without needing a complicated sauce. If you want a more complete chicken dinner, serve them with a simple starch and vegetables, like fluffy rice pilaf,oven-roasted mixed vegetables, or air fryer roasted potatoes.

Ingredients

For the chicken:

  • 10 chicken drumsticks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon cayenne pepper, optional
  • 1 tablespoon lemon juice

For the garlic butter:

  • 1/2 cup unsalted butter, melted
  • 5 garlic cloves, finely minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Optional garnish:

  • Extra chopped parsley
  • Lemon wedges

Step-by-Step Instructions

1. Preheat the oven

Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil, then place a wire rack on top if you have one. The rack helps the heat circulate around the drumsticks, which gives better browning. If you do not have a rack, place the chicken directly on the lined sheet pan and turn the pieces during cooking.

2. Dry the chicken

Pat the chicken drumsticks very dry with paper towels. This step is important. If the chicken is wet, the skin steams instead of roasting, and you lose some of that nice oven-baked texture.

3. Season the drumsticks

Place the drumsticks in a large bowl. Add olive oil, salt, pepper, paprika, onion powder, dried thyme, dried parsley, cayenne if using, and lemon juice. Toss well until the chicken is evenly coated on all sides.

The seasoning here is simple on purpose. The paprika helps with colour, the onion powder gives a savoury base, and the lemon juice wakes up the butter and garlic later.

4. Start roasting

Arrange the drumsticks on the prepared baking sheet, leaving space between each one. Roast for 25 minutes.

At this stage, the chicken will start to brown, and some of the fat from the skin will render. This gives the garlic butter a better surface to stick to.

5. Make the garlic butter

While the chicken is roasting, mix the melted butter, minced garlic, parsley, Dijon mustard, lemon zest, lemon juice, salt, and pepper in a small bowl.

The Dijon is not there to make the chicken taste like mustard. It helps the butter cling to the chicken and adds a little depth. If you enjoy mustard-based chicken recipes, you can also try mustard chicken marinade or one-pan Dijon mustard chicken for a stronger mustard flavor.

6. Brush with garlic butter

After 25 minutes, remove the tray from the oven. Brush or spoon about half of the garlic butter over the drumsticks. Turn the chicken pieces, then brush the other side lightly.

Return the tray to the oven and bake for another 15 to 20 minutes, or until the chicken is deeply golden and cooked through.

7. Check doneness

Chicken drumsticks are safe when the thickest part reaches 165°F, but for drumsticks, I prefer cooking them closer to 175°F to 185°F. The meat becomes more tender and pulls away from the bone more easily.

8. Finish with more butter

Once the chicken is cooked, spoon the remaining garlic butter over the hot drumsticks. Let them rest for 5 minutes before serving. This short rest helps keep the juices inside the meat.

Tips for the Best Garlic Butter Drumsticks

Do not overcrowd the pan. Space helps the skin roast instead of steam.

Use fresh garlic if possible. Garlic powder works in the seasoning, but fresh garlic gives the butter its real character.

Add the garlic butter partway through baking. This keeps the garlic from burning and gives the chicken a cleaner garlic flavor.

Use a meat thermometer. Drumsticks can look cooked on the outside before the meat near the bone is ready.

For a crispier finish, broil the drumsticks for 1 to 2 minutes at the end. Watch closely because butter can brown quickly.

If you like the garlic butter idea, the same flavour works beautifully with seafood, especially oven-baked garlic butter shrimp. For a base recipe you can keep in the fridge or freezer, use homemade garlic butter or freezer-friendly garlic butter.

How to Serve Garlic Butter Chicken Drumsticks

These drumsticks work with simple sides because the garlic butter already brings plenty of flavor. For potatoes, serve them with homemade mashed potatoes, classic pommes boulangères, or crispy air fryer fries.

For a lighter plate, add grilled chicken Caesar salad as inspiration for a crisp salad-style side, or pair the drumsticks with classic vinaigrette on a simple green salad.

For a sauce-style meal, you can serve these with 2-minute garlic aioli, 2-minute garlic mayo, or homemade ranch dressing. The chicken already has garlic butter, so keep the sauce simple and use it on the side.

Substitutions

Chicken thighs instead of drumsticks

You can use bone-in, skin-on thighs. The timing will be similar, but check the internal temperature. For a dedicated thigh method, use oven-baked chicken thighs or air fryer chicken thighs.

Chicken breast instead of drumsticks

Chicken breast cooks faster and can dry out more easily. If you want that style, follow a breast method like juicy air fryer chicken breast instead of using the same timing as drumsticks.

Butter substitute

You can use half butter and half olive oil for a slightly lighter garlic coating. The flavor will be less rich, but still good.

Herbs

Parsley keeps the recipe classic, but thyme, rosemary, oregano, or chives also work. Use small amounts because dried herbs can become strong in the oven.

Lemon

If you do not have lemon, use a small splash of white wine vinegar or leave it out. The lemon helps balance the butter, but the recipe still works without it.

FAQ

Can I marinate the chicken?

Yes. You can season the chicken and let it rest in the fridge for 30 minutes to 8 hours. Do not add all the garlic butter as a long marinade because the butter will harden and the garlic can become too strong. For a true marinade-style chicken dinner, use 5 easy chicken marinades or easy one-pan marinated chicken.

Can I make this in the air fryer?

Yes. Cook the drumsticks at 380°F for about 22 to 28 minutes, turning halfway. Brush with garlic butter during the final 8 to 10 minutes. For air fryer chicken ideas, you can also use air fryer chicken wings or air fryer chicken tenders as related methods.

How do I keep the garlic from burning?

Add the garlic butter after the chicken has already roasted for 25 minutes. This gives the chicken time to brown first and protects the garlic from sitting in the oven too long.

Can I use salted butter?

Yes, but reduce the added salt in the garlic butter. Taste the butter before brushing it over the chicken.

What temperature should chicken drumsticks be?

The minimum safe internal temperature is 165°F, but drumsticks are usually more tender when cooked a little higher, around 175°F to 185°F.

Can I make this ahead?

Yes. Cook the drumsticks, cool them, and refrigerate them in an airtight container for up to 3 days. Reheat in a 375°F oven or air fryer until hot. Add a little extra garlic butter before serving if needed.
