Carrot Cake with Cream Cheese Frosting

This carrot cake has two tender spiced layers and a simple cream cheese frosting. I use freshly grated carrots, neutral oil, and a mix of white and brown sugar for a moist crumb without pineapple or raisins. The frosting is spread with a spatula rather than piped into elaborate decorations. The recipe makes one 8-inch layer cake, cut into twelve portions. Allow plenty of cooling time before assembly, because even a slightly warm cake can soften the cream cheese mixture.

Prepare two matching cake pans

Heat the oven to 175°C, or 350°F. Grease two round 20 cm cake pans and line their bases with parchment circles. Using matching pans helps the layers bake at a similar rate and makes assembly easier. I prefer getting the pans ready before mixing, so the batter can be divided and baked promptly. The recipe is designed for two layers, rather than one very deep cake that would need a longer centre bake.

For another layered cake with cream cheese flavour, red velvet cake follows a separate recipe. Here the carrots, warm spices, and oil-based crumb are the focus. There is no need to borrow a different cake’s baking time or add extra liquid just because its batter looks thinner. Each formula has its own balance of flour, fat, eggs, and moisture.

Grate carrots from whole vegetables

Peel and finely grate 300 g of carrots, about three loosely filled US cups. Weigh after peeling and grating for the most useful measurement. I like thin strands that soften into the cake rather than thick dry shreds that remain obvious in the crumb. Ready-shredded salad carrots can be much coarser and drier, so they do not behave quite like freshly grated carrots in this batter.

Do not squeeze the grated carrots dry. Their moisture is included in the recipe. At the same time, avoid pouring an unmeasured pool of liquid from an unusually wet container into the mixing bowl. Keep the grated amount ready while the other ingredients are combined. For another bake with a familiar warm spice profile, apple cinnamon muffins use diced fruit and their own proportions, rather than a direct replacement for the carrots here.

Whisk the dry ingredients separately

Combine the flour, baking powder, salt, cinnamon, ginger, and nutmeg in a bowl. Use 250 g of all-purpose flour, approximately two US cups plus one tablespoon if spooned and levelled. I prefer weighing because packing flour into a measuring cup can make a moist cake seem unexpectedly heavy. Whisking the spices into the dry ingredients also prevents a concentrated pocket of cinnamon or raising agent in one slice.

This recipe uses baking powder as its raising agent. Do not replace the measured amount with baking soda, which behaves differently. The spice quantities are meant to support the carrot flavour rather than cover it completely. If you prefer a gentler cake for another occasion, one-bowl vanilla cake offers a separate option with fewer spices. Keep that recipe’s mixing method separate from this oil-and-carrot batter.

Mix the wet ingredients, then fold

Whisk the eggs with the white and brown sugars until evenly combined, breaking up firm lumps of brown sugar. Slowly whisk in the neutral oil and vanilla. There is no butter-creaming stage in this cake. I like a neutral oil so the cinnamon and carrot remain clear, rather than a strongly flavoured oil taking over the finished crumb. The mixture should be combined without needing to whip it into a very thick foam.

Fold in the dry mixture just until almost incorporated, then add the grated carrots and finish folding until no dry flour pockets remain. Optional chopped walnuts can be added at this point, but the plain version does not need them for structure. Do not taste raw batter, which contains uncooked flour and egg. Scrape the bottom of the bowl so the last portion does not contain a hidden layer of dry ingredients.

Divide the batter evenly and bake

Divide the batter between the prepared pans and smooth lightly. A scale can help make the layers similar, although a careful visual division is also workable. Bake for twenty-eight to thirty-five minutes, beginning checks near the earlier time. A skewer inserted into the centre should come out without wet batter, and the surface should spring back lightly rather than leave a deep wet impression when touched gently.

I prefer checking the central crumb as well as the colour, because a spiced brown cake can look baked before its centre is ready. If your oven has a strong hot spot, turn the pans near the end once the cake has set enough. Leave the layers in their pans for ten minutes, then turn onto racks, remove the parchment, and cool completely. Allow at least two hours of total cooling before frosting, longer if they are still warm.

Use block cream cheese for the frosting

Measure 225 g of full-fat block cream cheese, 60 g of softened unsalted butter, and 180 g of icing sugar. Spreadable cream cheese from a tub often has a different moisture level and can produce a looser frosting. Canadian blocks and American packages do not all weigh the same, so check the weight rather than assuming one package is exactly the measured quantity. The butter should be soft enough to beat smoothly but not melted.

Beat the butter until smooth, then add the cream cheese and mix briefly until combined. Add sifted icing sugar in stages, followed by vanilla and a teaspoon of lemon juice if desired. I don’t like beating cream cheese frosting for a long time once smooth, because it can become softer. Refrigerate briefly if needed before spreading, rather than adding large amounts of extra sugar immediately. The frosting should hold gentle spatula marks without being stiff like a dense dough.

Assemble a simple two-layer cake

Place one completely cool layer on a serving plate and spread about one third of the frosting over it. Add the second layer, then spread the remaining frosting across the top and sides in a modest coat. I prefer a slightly rustic finish that leaves the cake’s shape clear. If the layers have small domes, trim only what is necessary for stable stacking, using a serrated knife once they are fully cool.

Chill the assembled cake for about thirty minutes if you want firmer frosting and cleaner slices. This chilling is additional to the active preparation and cooling periods. For a different cake on a separate baking day, lemon yogurt cake brings a citrus flavour. Pumpkin muffins are another way to plan a spiced bake when you want individual portions rather than a layered centrepiece.

Serve and refrigerate the frosted cake

Cut into twelve portions with a clean knife, wiping between cuts if desired. Let a refrigerated portion lose a little chill before eating for a softer crumb, while keeping the rest of the cake cold. The cream cheese frosting means this finished cake should be stored in the refrigerator. I prefer taking out only the slices needed instead of leaving the entire cake on the table for a long gathering.

Keep covered at 4°C or below and use within three days, refrigerating within two hours of preparation or serving. Freeze wrapped slices for up to one month for best quality, then thaw in the refrigerator. The frosting may become slightly softer after thawing. For another simple bake to keep as separate portions, blueberry muffins have a different storage routine because they do not carry this cream cheese topping. Always judge this cake’s storage by its frosting as well as its baked layers.

  • Optional: 60 g about 1/2 US cup chopped walnuts
  • A little oil or butter for pans
  • For frosting: 225 g 8 oz full-fat block cream cheese, softened
  • For frosting: 60 g 1/4 US cup unsalted butter, softened
  • For frosting: 180 g 1 1/2 US cups icing sugar, sifted
  • For frosting: 5 ml 1 tsp vanilla extract
  • For frosting optional: 5 ml (1 tsp) lemon juice

Instructions

  • Heat oven to 175°C (350°F). Grease two 20 cm (8-inch) round cake pans and line their bases with parchment. Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg separately.
  • Whisk eggs with both sugars, breaking up lumps. Whisk in oil and vanilla. Fold in dry mixture until almost combined; add carrots and optional walnuts, folding only until no dry flour pockets remain.
  • Divide evenly between pans and smooth lightly. Bake 28–35 minutes until centres are set, spring back lightly, and skewers in central crumb show no wet batter. Cool in pans 10 minutes, then turn onto racks, remove parchment, and cool completely, at least 2 hours in total.
  • Beat frosting butter until smooth. Briefly beat in cream cheese, then add sifted icing sugar in stages, followed by vanilla and optional lemon juice. Stop when smooth; refrigerate briefly if too soft.
  • Spread about one third of frosting between cool cake layers, then the remainder over top and sides. Chill about 30 minutes if desired for firm slicing. Cut 12 portions and keep the frosted cake refrigerated.

Notes

Allow at least 2 hours cooling before frosting and an optional 30 minutes chilling after assembly, in addition to active prep and baking. Calories approximate, include frosting, and exclude optional walnuts. Contains wheat, egg, and dairy; optional walnuts add tree nuts. Use block cream cheese, not spreadable tub style. Do not eat raw batter. Refrigerate frosted cake at 4°C or below within 2 hours and use within 3 days; freeze slices up to 1 month for quality and thaw in refrigerator.
