What Makes This Recipe Different

The unusual step is cutting along both sides of the drumstick bone before adding the marinade. I make it this way because the seasoning can reach more of the meat, not only the outside skin. It also helps the thickest part cook more evenly.

Do not completely remove the meat from the bone. The goal is simply to open the drumstick slightly like a book. One or two deep cuts along the bone are enough.

The original video used tomato paste, turmeric, ginger, cumin, garlic, an all-purpose spice blend, and a small amount of chicken seasoning. In this written version, I use measured salt and a salt-free seasoning blend. Liquid chicken seasonings and bouillon concentrates vary greatly in sodium, so a fixed amount of salt gives readers a more predictable result.

Unlike my sticky soy drumsticks, this version is not sweet or glossy. It is also different from lemon pepper drumsticks, which have a brighter, more citrus-forward flavour. Here, the taste is warm, earthy, garlicky, and savoury.

Ingredients You Need

Chicken drumsticks: Use five medium drumsticks weighing approximately 1 3/4 to 2 pounds in total. If yours are especially large, allow additional cooking time.

Neutral oil: Oil loosens the tomato paste and carries the powdered spices across the surface. Canola, sunflower, avocado, or another neutral cooking oil works.

Tomato paste: Use thick tomato paste, not tomato sauce or passata. It gives the marinade body, colour, and a subtle concentrated sweetness.

Turmeric: A measured 3/4 teaspoon gives the chicken a golden colour without making the marinade taste overwhelmingly earthy.

Ground ginger and cumin: Ginger adds warmth while cumin gives the marinade its deeper toasted aroma.

Salt-free all-purpose seasoning: Choosing a salt-free blend prevents the seasoning from becoming too salty once the measured salt is added.

Garlic: Finely minced garlic blends into the paste more evenly than large pieces.

Chives: Chopped chives add a fresh finish after baking. Green onions can also be used.

Step-by-Step Instructions

1. Open the Drumsticks Along the Bone

Place one drumstick on a cutting board. Using a sharp knife, make a deep incision along one side of the bone, then repeat on the other side. Gently open the meat without separating it from the bone.

What I look for here is a wider, flatter drumstick with the interior meat slightly exposed. This gives the marinade somewhere to go. Avoid cutting repeatedly into small pieces, since too many cuts can make the thinner edges dry before the centre is ready.

2. Mix the Marinade

Combine the oil, tomato paste, turmeric, ginger, cumin, salt-free seasoning, minced garlic, and salt in a bowl. Stir until no dry pockets remain.

At this point, the marinade should resemble a loose tomato paste. It should hold onto a spoon but spread without tearing the chicken skin. If it is unusually stiff because your tomato paste is very concentrated, add another teaspoon of oil.

The mistake to avoid is adding water until the marinade becomes runny. A watery mixture will collect in the bottom of the baking dish instead of staying on the drumsticks.

3. Coat and Marinate the Chicken

Add the drumsticks to the bowl and massage the marinade over every surface. Work some of it into the openings beside the bone.

Cover and refrigerate for at least 1 hour. You can marinate the chicken for up to 6 hours for a deeper flavour. I would not leave this mixture on the chicken overnight because the garlic and powdered spices can become too dominant.

Before baking, remove the chicken from the refrigerator while the oven preheats. Arrange the pieces only after the oven has reached its full temperature.

4. Arrange and Bake

Preheat the oven to 400°F. Place the drumsticks in a baking dish or on a rimmed sheet pan, leaving a little space between them. Spoon any marinade remaining in the bowl over the chicken.

Bake for 35 to 45 minutes. The exact time depends on the size of the drumsticks, the baking dish, and the accuracy of the oven.

A crowded dish traps steam and slows browning. Use a pan large enough that the pieces do not overlap. If you are doubling the recipe, divide the chicken between two pans rather than squeezing everything into one small dish.

5. Check the Chicken and Finish

Insert a digital thermometer into the thickest part of each large drumstick without touching the bone. Chicken pieces should reach at least 165°F. If some pieces are smaller, remove them when ready and return the larger drumsticks to the oven.

For more colour, place the cooked drumsticks under the broiler for 1 to 3 minutes. Watch closely because tomato paste and garlic can darken quickly.

You know the chicken is ready when the surface is browned in spots, the marinade no longer looks wet, and the juices around the meat are sizzling. Sprinkle with chopped chives and rest for 5 minutes before serving.

Chef Tips for Better Drumsticks

Use a metal sheet pan when you want stronger browning. A ceramic or glass baking dish holds moisture around the chicken and usually produces a softer exterior.

Do not apply a thick mound of marinade to the top of each drumstick. More seasoning is not always better. A thin, even coating cooks into the skin, while a thick layer can remain pasty.

Check more than one piece. Drumsticks are rarely identical in size, and one large piece may need several minutes longer than the others.

The chicken provides a substantial source of protein, while the marinade uses only a small amount of oil. The final meal can be kept straightforward with rice and vegetables or made more comforting with potatoes.

What to Serve With

More Ways to Cook Chicken Drumsticks
