Why This Air Fryer Method Works

Step-by-Step Instructions
1. Dry the chicken

3. Preheat the air fryer

Lightly spray or brush the basket if needed. Do not add too much oil, because the drumsticks will release some fat as they cook.

4. Arrange the chicken in one layer
Place the drumsticks in the basket in a single layer. Leave a little space between them so the air can circulate. If your air fryer is small, cook in batches instead of stacking the chicken.
This is also why this recipe is different from a tray of oven-baked chicken thighs or air fryer chicken thighs. Drumsticks are smaller and cook nicely in a basket, but they still need space around them to crisp.
5. Cook and turn
Cook at 380°F for 12 minutes. Flip the drumsticks, then cook another 10 to 12 minutes, or until the outside is browned and the inside is fully cooked.
For extra browning, increase the temperature to 400°F for the last 2 to 4 minutes. Watch closely near the end because air fryers vary. The safest way to check doneness is with a meat thermometer. Chicken should reach 165°F in the thickest part, away from the bone. For drumsticks, I often prefer them closer to 175°F to 185°F because the texture becomes more tender around the bone.

6. Rest before serving
Transfer the chicken to a plate and let it rest for 5 minutes before serving. This keeps the juices in the meat and gives the skin time to settle.

Finish with lemon juice, parsley, or a little melted homemade garlic butter if you want a richer flavor. For a dipping sauce,homemade ranch dressing or 2-minute garlic mayo works very well.
How to Make Them Extra Crispy
The best crispy air fryer chicken drumsticks start before the chicken goes into the basket. Pat the skin dry, season evenly, use a small amount of oil, and do not overcrowd the air fryer.
The optional baking powder is useful, but only a small amount is needed. Too much can taste unpleasant. A light sprinkle mixed into the spices helps the surface dry and brown.
Another important trick is the final high-heat finish. Cooking most of the way at 380°F keeps the meat juicy, then a short blast at 400°F helps the skin crisp. This gives you a better balance than cooking too hot from the start.
Substitutions

Olive oil: Use avocado oil, vegetable oil, or canola oil.
Paprika: Use smoked paprika for a deeper BBQ-style flavor.
