Why these nuggets come out better

Ingredients (Imperial Only)

Chicken mixture

  • 2 lb boneless, skinless chicken breast, cut into chunks
  • 1 large egg
  • 2 tbsp Dijon mustard (or mild mustard for kids)
  • 1 tsp curry powder
  • 1 tbsp neutral oil (canola/vegetable/peanut)
  • 2 tbsp all-purpose flour (see notes; don’t overdo it)
  • 1 1/4 tsp kosher salt (or 1 tsp fine salt)
  • 1/2 tsp black pepper
  • Optional (kid-friendly sweet note): 1–2 tsp sweet soy sauce
  • Optional (adult heat): 1–2 tsp hot sauce or a pinch of cayenne

Breading station

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 to 2 1/2 cups breadcrumbs (panko for extra crunch)

For frying

  • Neutral oil for deep frying (peanut/canola/vegetable)

Step-by-step instructions

1) Make the chicken mixture (don’t overwork it)

Start by cutting the chicken into chunks so the food processor (or grinder) works evenly. Pulse the chicken until it becomes a sticky, finely chopped mixture—stop before it turns into a smooth paste. A little texture is good; it helps the nuggets feel “chicken-y” instead of bouncy.

Add the egg, mustard, curry powder, neutral oil, salt, pepper, and (if using) sweet soy sauce and/or hot sauce. Pulse just until combined.

Now add the 2 tablespoons flour and pulse a few times. The flour helps bind the mixture so it holds shape during breading and frying, but too much flour can make nuggets dense. The mixture should be sticky and scoopable, not dry.

2) Set up the 3-step breading station

You’ll need three bowls:

  1. Flour (season it lightly with a pinch of salt and pepper if you want)
  2. Beaten eggs
  3. Breadcrumbs (panko recommended)

3) Shape the nuggets

Use a spoon or small scoop to portion the mixture into bite-size mounds (about 1 1/2 to 2 tbsp each). Slightly flatten them—this helps them cook evenly and keeps the center from being underdone.

Work in batches and keep the rest of the mixture in the fridge while you bread the first batch.

4) Bread the nuggets (press lightly)

Bread each nugget in this order:

  • Flour (tap off excess)
  • Egg (let excess drip off)
  • Breadcrumbs (press lightly so they stick)

Place on the tray and repeat.

Rest the breaded nuggets for 10–15 minutes before frying. This small step helps the coating hydrate and cling better.

5) Fry at the right temperature (this matters most)

Heat frying oil to 350°F (175°C). In my transcript, the temperature can be misread—anything around 170–180°C is the sweet spot for crisp nuggets without oil absorption.

Fry in small batches so the oil temperature doesn’t crash. Cook for 4–6 minutes, turning once or twice, until deeply golden and cooked through.

For food safety, aim for 165°F (74°C) internal temperature in the thickest nugget.
