Easy Homemade Chicken Fried Rice (Better Than Takeout, Real Wok Texture)

Chicken fried rice is a one-pan meal made by stir-frying cold cooked rice with marinated chicken, eggs, and crisp vegetables over high heat. What makes this version different is the velvety soy-ginger chicken (inspired by my YouTube video) and a method designed to stay dry, fluffy, and lightly smoky instead of turning saucy. Make it on a weeknight when you want something fast, satisfying, and flexible with whatever vegetables you have.

Homemade Chicken Fried Rice

This recipe is based on my YouTube “Riz Frit” video, with a few small adjustments since publication so the proportions are reliable, the seasoning is balanced, and the final texture is true fried rice (separate grains, not wet rice).

The key to real fried rice texture (and why cold rice matters)

If you’ve ever made fried rice and ended up with something soft, sticky, or “steamy,” it’s almost always because the rice was too fresh or too wet. Cold rice has drier grains that separate easily, so it can take heat and sauce without clumping. If you already have leftover rice, you’re ahead. If not, you can still make it the same day—just spread it on a tray to dry and cool.

If you’re building a rice workflow for meal prep, my rice pilaf (fluffy stovetop pilaf) is another solid base recipe to keep in your rotation when you want consistent grains.

Ingredients overview

In the video, the marinade quantities are “chef style” (done by feel). For a website recipe that anyone can reproduce, the liquid seasoning must be scaled so the dish stays dry and balanced. That’s why the soy and vinegar are measured in tablespoons here, and the chicken is cooked quickly and uncovered—true wok style.

Also, instead of treating this like a braise (covering for a long time), we cook in stages: chicken first, then vegetables, then rice, then eggs. That’s the path to restaurant texture.

Homemade Chicken Fried Rice

Step-by-step (detailed)

1) Cook the rice (or prep leftover rice)

Best option: Use day-old rice from the fridge.
Same-day option: Cook rice, then dry it.

  • Rinse the rice briefly until the water runs mostly clear (optional but helpful).
  • Cook according to package directions.
  • Spread the cooked rice on a large baking sheet, fluff, and let it cool 30–60 minutes (or refrigerate uncovered).

If you need a reference point for rice texture and timing, my Cantonese-style fried rice is another good comparison recipe—same goal: separate grains, fast cooking, high heat.

2) Prep the chicken (the “velvet” method from the video)

Cut the chicken into small pieces so it cooks fast and stays juicy.

  • Cut chicken into thin strips, then small bite-size pieces (about 1/2 inch / 1–1.5 cm).
  • In a bowl, mix the marinade ingredients until smooth.
  • Add the chicken and toss well.
  • Marinate 20–30 minutes (or up to 3 hours in the fridge).

This technique sits in the same family as the flavor approach used in sweet and sour chicken in under 30 minutes—quick, high-heat cooking, balanced sweet-sour-savory notes, and chicken that stays tender.

3) Prep the vegetables and eggs

  • Slice carrots thin on a bias (quick cooking).
  • Dice onion.
  • Slice scallions; keep whites and greens separate.
  • Beat eggs in a bowl with a pinch of pepper.

Work clean and fast here—fried rice is about rhythm.

4) Cook the eggs first (best texture)

Heat a wok or large skillet over medium-high heat.

  • Add a little oil.
  • Pour in the beaten eggs.
  • Scramble until just set.
  • Remove to a plate.

If you love egg technique and want that creamy edge when you’re not doing fried rice, check my creamy French omelette recipe—different style, but the same principle: control heat and don’t overcook eggs.

5) Cook the chicken quickly (no lid)

Turn heat to high.

  • Add oil.
  • Add the marinated chicken in a single layer.
  • Sear 1–2 minutes, then stir-fry until mostly cooked (3–5 minutes total).
  • Transfer to a plate.

Keep the pan hot. If you overcrowd the skillet, you’ll steam the chicken.

6) Stir-fry vegetables (keep them crisp)

  • Add a touch more oil if needed.
  • Add onion and carrots.
  • Stir-fry 3–4 minutes until fragrant and slightly softened.
  • Add scallion whites; stir 30 seconds.

7) Fry the rice (this is the main event)

  • Add the cold rice to the hot pan.
  • Press and toss to break clumps.
  • Stir-fry 3–5 minutes until the grains feel dry and hot.

Now add the seasoning:

  • Drizzle soy sauce around the edges of the pan (it hits heat first).
  • Add a small splash of rice vinegar for brightness.

Return the chicken and eggs:

  • Add chicken back.
  • Add scrambled eggs back.
  • Toss vigorously.

Finish:

  • Add scallion greens.
  • Taste and adjust (a small extra splash of soy is usually enough).

Seasoning notes (so it doesn’t turn salty or sour)

Soy sauce strength varies. If you’re using a regular soy sauce, start with the amounts in the recipe card and adjust cautiously. If using low-sodium soy, you may want a little more at the end.

Rice vinegar is there to wake up the dish—not to dominate it. The goal is “clean” fried rice flavor, not pickled rice.

How this recipe is different from similar dishes on my site

This chicken fried rice is high-heat, quick, and dry—a true stir-fry texture.

This one stays squarely in the “wok-style rice” lane.

Homemade Chicken Fried Rice

Nutrition context (simple, practical)

This dish is naturally protein-rich thanks to chicken and eggs, and it’s easy to adjust the balance: add more vegetables for a lighter plate, or add a touch more rice for a more filling comfort-food bowl. It’s also a great “clean-out-the-fridge” recipe year-round because the technique works with whatever vegetables you have.

  • Long-grain rice: very reliable for fluffy grains.
  • Brown rice: works, but needs more oil and more heat time to dry out.

  • Skip the eggs and add more chicken and vegetables.
  • You can also add a little more soy and scallions for richness.

FAQ

Can I make chicken fried rice with fresh rice?

Yes, but you must dry it. Spread cooked rice on a tray, fluff, and cool it uncovered. Cold rice fries better because the grains separate.

Why does my fried rice turn mushy?

Too much moisture: rice too fresh, pan not hot enough, overcrowding, or too much sauce. Cook in batches if your pan is small.

Do I need a wok?

No. A large skillet works well. A wok is great for heat distribution and tossing, but the method matters more than the pan.

Can I freeze it?

Yes. Cool quickly, portion, and freeze up to 2 months. Reheat in a hot skillet to bring back texture.

What oil should I use?

A neutral high-heat oil is best (peanut, canola, avocado). Avoid butter for the main fry (it burns).
