Homemade Chicken Nuggets

Homemade Chicken Nuggets (Better Than Fast Food) — Extra Crispy, Juicy, and Easy

These homemade chicken nuggets are based on my video, but I’ve made a few important updates since publishing to make the results more consistent: a corrected frying temperature, tighter proportions for the chicken mixture, and a simple rest step that helps the breading stick better. The goal is the same: nuggets that are tender and juicy in the middle, crisp on the outside, and perfect for kids or as an appetizer for adults.

  • 2 lb chicken breast
  • 1 large egg
  • 2 tbsp Dijon mustard or mild mustard
  • 1 tsp curry powder
  • 1 tbsp neutral oil
  • 2 tbsp all-purpose flour
  • 1 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • Optional: 1–2 tsp sweet soy sauce
  • Optional: 1–2 tsp hot sauce or pinch cayenne

Breading:

  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 2 to 2 1/2 cups breadcrumbs panko

Frying:

  • Neutral oil peanut/canola/vegetable

Instructions

  • Pulse chicken in food processor until finely chopped (not smooth). Add egg, mustard, curry, oil, salt, pepper (and optional soy/hot sauce). Pulse to combine. Add 2 tbsp flour; pulse briefly. Chill 20–30 min.
  • Set up breading: flour / eggs / breadcrumbs.
  • Scoop and shape nuggets (1 1/2–2 tbsp each), flatten slightly.
  • Bread: flour → egg → breadcrumbs, pressing lightly. Rest 10–15 min.
  • Fry at 350°F in batches for 4–6 min until deep golden and 165°F internal. Drain and salt.

Notes

Substitutions

  • Chicken breast: Chicken thighs work too (juicier), but the mixture may feel softer; chill longer (30–45 min).
  • Mustard: Yellow mustard for kids; Dijon for adults.
  • Curry powder: Swap for smoked paprika + garlic powder for a more “classic nugget” flavor.
  • Breadcrumbs: Panko = crunchier; fine breadcrumbs = tighter crust.
  • Deep-fry option: Air fryer or oven works, but the texture is different. Use a light spray of oil and cook at 400°F until crisp, flipping once (time varies by nugget size).
  • Gluten-free: Use GF flour blend + GF breadcrumbs (panko-style if possible).

FAQ

Why are my nuggets greasy?
Oil temperature is too low, or you’re frying too many at once. Keep the oil at 350°F and fry in batches.
Why does the breading fall off?
Usually excess flour, skipping the rest step, or nuggets going into oil while the coating is still dry. Tap off flour, press breadcrumbs lightly, and rest breaded nuggets 10–15 minutes.
Can I make these ahead?
Yes. Bread them, place on a tray, and refrigerate up to 24 hours before frying.
Can I freeze them?
Yes. Freeze breaded nuggets on a tray until solid, then bag. Fry from frozen at 350°F, adding 1–2 minutes.
Can I pan-fry instead of deep-fry?
You can, but you’ll need more turning and the coating won’t be as even. Deep frying gives the most consistent result.
How do I know they’re cooked without cutting all of them?
Check one nugget with a thermometer (165°F). After that, match timing/size for the rest.
