Easy Cottage Cheese Buffalo Chicken Dip

This cottage cheese buffalo chicken dip has the heat and tang of classic Buffalo dip, but the base is blended cottage cheese instead of a heavy cream cheese mixture. I like the cottage cheese completely smooth before adding the chicken because it gives the dip a creamy texture without little curds, while shredded cheddar adds just enough richness. The mistake to avoid is baking it too long: once the edges are bubbling and the cheese has melted, it is ready.

Buffalo chicken dip is a warm appetizer made with shredded chicken, hot sauce and a creamy cheese base. This version uses cottage cheese to make that base, giving you a protein-rich dip that still feels substantial enough for game day, parties or a quick snack with vegetables and crackers.

This recipe is based on the approach from my YouTube cooking video, with a few adjustments since publication. I prefer a little less cheese and a smoother cottage cheese base here because the Buffalo sauce stays more noticeable instead of disappearing under a thick layer of dairy.

What Makes This Buffalo Dip Different

The main difference is the cottage cheese. Traditional Buffalo chicken dip often relies heavily on cream cheese, sometimes combined with ranch dressing. Here, blending cottage cheese creates a thick, creamy base while keeping the flavour a little sharper and lighter.

I also do not add too many ingredients. Buffalo sauce needs room to come through. Once you start adding large amounts of cheese, ranch seasoning, sour cream and mayonnaise, the dip can become salty and surprisingly heavy.

If you want a cooler, herbier dip without the Buffalo heat, my creamy cottage cheese ranch dip goes in a completely different direction. For something garlicky and fresh, there is also this cottage cheese garlic and herb dip.

For this one, what I look for is a creamy orange mixture that still has visible strands and pieces of chicken. It should scoop easily onto a cracker without running off the edge.

Ingredients You Need

Cottage cheese: Use regular cottage cheese rather than dry-curd cottage cheese. A 2% or 4% version gives the dip a good creamy consistency once blended.

Cooked chicken: Shredded chicken breast or thigh both work. Keep some texture in the chicken instead of chopping it into a paste.

Buffalo hot sauce: Use a Buffalo-style cayenne pepper sauce you already enjoy. The sauce provides most of the acidity and heat.

Cheddar: A small amount melted through the dip rounds everything out. Sharp cheddar works particularly well because you do not need much.

Garlic powder and onion powder: These fill out the savoury flavour without adding chunks of raw garlic or onion.

Green onions: Add freshness at the end and a little crunch against the creamy dip.

Step-by-Step Instructions

1. Blend the cottage cheese

Add the cottage cheese to a blender or food processor with the garlic powder and onion powder. Blend until completely smooth.

Do not stop when the cottage cheese simply looks chopped. Give it enough time to become creamy. Scrape down the sides once if necessary.

At this point it should look closer to a thick sour cream than cottage cheese. This step is what separates a smooth Buffalo dip from one with a grainy or curd-like texture.

If you like using cottage cheese as a savoury base, the same ingredient takes on a very different texture in my cottage cheese queso and layered cottage cheese taco dip.

2. Add the Buffalo sauce

Transfer the blended cottage cheese to a mixing bowl. Stir in the Buffalo sauce until the colour is uniform.

Taste it before adding more. Buffalo sauces vary quite a bit in salt, acidity and heat, so I prefer to adjust at this stage rather than automatically pouring in extra sauce.

The mixture should taste slightly stronger than you think necessary when cold. Once the chicken and melted cheddar are added, both will soften the heat.

3. Fold in the chicken and cheese

Add the shredded cooked chicken and most of the cheddar. Fold everything together until the chicken is evenly coated.

The mistake to avoid here is shredding the chicken too finely. I like pieces small enough to scoop easily but large enough that you can still tell this is a chicken dip.

If you are planning a larger chicken spread, sticky maple chicken wings give you a sweet contrast to the spicy dip, while baked maple lemon chicken tenders work well when you want something less messy to serve alongside it.

4. Bake until hot and bubbling

Spread the mixture in a small baking dish and scatter the reserved cheddar over the top.

Bake at 375°F until the dip is hot through the centre, the cheddar has melted and you can see a few bubbles forming around the perimeter, about 15 to 20 minutes.

Do not wait for the entire surface to become deeply browned. Cottage cheese can release moisture when overheated, so pulling the dish once it is hot and bubbling gives you a smoother result.

You know it is ready when a spoon dragged through the centre leaves a creamy trail and steam comes from the middle of the dish.

5. Finish and serve

Let the dip stand for about 5 minutes. Scatter sliced green onions over the top and add a small drizzle of Buffalo sauce if you want more heat.

The short rest matters. Straight from the oven, the dip is a little loose and extremely hot. After several minutes it thickens enough to cling properly to crackers, celery or toasted bread.

What to Serve With Cottage Cheese Buffalo Dip

Celery and carrot sticks are the classic choice because their crunch and freshness cut through the hot sauce and cheese. Bell pepper strips and cucumber slices also work if you want more vegetables on the platter.

For something crunchy made from the same main ingredient, try my crispy cottage cheese crackers or baked cottage cheese chips.

You can also put together a larger appetizer table with cottage cheese nachos and garlic mozzarella cottage cheese breadsticks. They are all cottage cheese recipes, but the textures and flavours are different enough that the table does not feel repetitive.

Chef Tips for a Better Buffalo Dip

Blend the base longer than you think. Cottage cheese changes texture dramatically after another 20 or 30 seconds in a powerful blender.

Keep the chicken fairly dry. If you are using freshly cooked chicken, avoid adding accumulated juices from the container or pan. Too much liquid can make the dip watery.

Finally, adjust the Buffalo sauce before baking. You can always drizzle more on top, but once too much has been mixed into the cottage cheese, the only way to reduce the heat is to add more dairy.

Make-Ahead and Storage

You can assemble the dip ahead of time, cover the baking dish and refrigerate it before baking. If it goes into the oven directly from the refrigerator, expect it to take several extra minutes to become hot in the centre.

Leftovers can be refrigerated in a covered container. Reheat only what you plan to eat. Gentle reheating works better than repeatedly heating the full batch because excessive heat can cause the dairy mixture to separate slightly.

Cold leftovers are also thick enough to spread in a sandwich or wrap.

Substitutions

Chicken breast and chicken thighs are both suitable here. Use whichever cooked chicken you have available, keeping in mind that thigh meat will give the dip a slightly richer result.

You can change the cheddar for Monterey Jack if you prefer a milder cheese. For a sharper Buffalo-style flavour, a small amount of crumbled blue cheese can be scattered over the finished dip instead of mixing it through the entire base.

The cottage cheese is important to this particular recipe because it defines both the texture and the search intent of the dish. If you want a different cottage cheese appetizer rather than substituting it away, spinach cottage cheese stuffed mushrooms are another savoury option.

You can also reduce the Buffalo sauce for a milder version. I would not replace all of it with plain hot sauce unless you compensate for the difference in flavour, since Buffalo-style sauce has a particular buttery, tangy profile.

FAQ

Does cottage cheese melt in Buffalo chicken dip?

Not exactly like cheddar. Once blended, cottage cheese becomes a smooth creamy base and heats through without producing the same stretchy melted-cheese texture. The cheddar supplies the melted component.

Can I make cottage cheese Buffalo chicken dip without cream cheese?

Yes. This recipe is specifically designed without cream cheese. Blended cottage cheese provides the creamy base.

Is cottage cheese Buffalo chicken dip high in protein?

Cottage cheese and chicken are both protein-rich foods, so this dip naturally provides more protein than a dip made primarily from mayonnaise or sour cream. The exact amount depends on the products and serving size you use.

Can I make it without chicken?

You can omit the chicken for a simple spicy cottage cheese Buffalo dip, although the finished recipe will be thinner and the yield will change. If doing that, reduce the Buffalo sauce slightly at first and adjust after blending.

Why did my cottage cheese dip become watery?

The most likely causes are excess liquid from the chicken, a particularly wet cottage cheese or overheating the finished dip. Bake only until it is hot and bubbling at the edges.

Can I serve this dip cold?

You can, although I prefer it warm because the cheddar melts and the Buffalo flavour becomes more aromatic. For a dip specifically designed to be cool and creamy, try the cottage cheese ranch version instead.
