Green Mango Smoothie with Spinach, Kale and Vanilla Soy Milk

This green mango smoothie blends baby spinach, stemmed kale, partly frozen mango, and vanilla soy milk into a cool, creamy drink. The mango softens the flavor of the greens, while the vanilla rounds out the finish. Four ingredients, a little chopping, and a blender are all you need for one generous serving.

A simple green smoothie without banana or yogurt

This is a drinkable smoothie, not a spoon-thick breakfast bowl. The mango brings fruit flavor and a little body; the soy milk gives the blender enough liquid to move the leaves around. The spinach is mild, while the kale leaves a more noticeable green flavor. You will still taste the vegetables. That is part of the recipe, rather than something to hide behind several extra fruits.

The ingredient list stays short on purpose. There is no banana, yogurt, protein powder, or spoonful of honey in the filmed version. Partly frozen mango keeps the drink cool without a handful of ice melting into it. Vanilla soy milk also brings sweetness, depending on the brand, so taste before deciding that the smoothie needs anything else.

If you prefer a breakfast eaten with a spoon, try my cottage cheese smoothie bowl. For another way to prepare produce as a drink, my fresh fruit and vegetable juices follow a different approach. This recipe blends the leaves and fruit directly into the drink; there is no straining step.

The four ingredients and what each one does

Baby spinach is tender enough to blend quickly. Wash it if the package calls for washing, drain well, and remove any tired leaves. You only need a small amount. A large handful is not a reliable measure: hands, leaf sizes, and how tightly you pack them can change the balance substantially. Use the weight in the recipe card when you want to reproduce the video closely.

Kale needs a little more attention. Pull the leaves away from the tough central ribs, then weigh the leaves you will actually use. The weight in this recipe is for prepared kale, not a whole stalk with its stem attached. Roll the leaves together and slice them finely. This small knife step gives an ordinary blender a better chance of producing a smooth drink.

Use ripe, sweet mango, cut into pieces and partly frozen. It should be cold and firm but not one solid frozen block. Separate the pieces before they go into the blender. If you are using purchased frozen mango, let it soften just enough for your appliance to handle it. With fresh mango, chill the cut pieces first; expect a somewhat less thick result if they are completely thawed.

Vanilla soy milk provides the liquid and a gentle vanilla flavor. The video specifies this beverage, not coconut milk, heavy cream, or yogurt. Shake the carton before measuring. Different brands have different sweetness and richness, so keep the same greens-to-fruit ratio and judge the finish after blending. The measured milk is a little over a cup, which is enough liquid for a small batch of leaves and mango.

How to make the green mango smoothie

1. Put the mango in the blender

Add the partly frozen mango pieces to the blender jar. Check that the pieces are loose rather than frozen together. The video adds the fruit first, and that order works with its blender. If your appliance instructions specify liquid first, follow them when loading the same four ingredients. Keep the lid off only while filling the jar.

2. Prepare and slice the kale

Remove the kale ribs before measuring. Gather the leaves into a loose roll, then cut across them to make fine strips. You do not need to mince every piece into a paste, but leaving a large tough leaf whole asks more of the blender. Transfer all the prepared kale to the jar with the mango.

3. Slice the spinach

Gather the baby spinach leaves and slice them across into smaller pieces, as in the video. Spinach is softer than kale, but this keeps the preparation consistent and helps avoid a few large leaves clinging above the liquid. Add the spinach to the blender. Brush the loose pieces from the board into the jar so the measured portion actually makes it into the drink.

4. Add the vanilla soy milk

Pour in the measured vanilla soy milk. Before starting, check that the lid is seated properly and the jar is locked onto its base. The recipe does not need extra water at this stage. Adding a large splash immediately can make the finished smoothie thinner than intended, especially if your mango is already soft.

5. Blend until the leaves are finely dispersed

Start the blender according to its instructions and blend until the drink looks evenly green. A practical starting point is about 30 to 60 seconds, but the right time depends on the blender and the firmness of the mango. Small dark flecks are normal. Large leaf fragments, tough strands, or frozen mango pieces mean it needs more blending.

If ingredients stick above the blades, stop the motor before opening the lid. Scrape down safely, replace the lid, and blend again. Never put a spoon or knife into a running blender. If your appliance still cannot circulate the mixture, add a tablespoon of soy milk, blend, and check again. That small adjustment is preferable to pouring in an unmeasured extra cup.

6. Taste, pour, and serve

Taste a small spoonful for texture and balance. Pour into a glass or a handled jar and serve right away. The finished smoothie should flow into the glass in a thick stream, with fine green flecks throughout. A spoon standing upright would suggest a much thicker preparation than this one. No garnish is needed; a straw is optional.

Substitutions and small adjustments

You can replace the kale with the same prepared weight of baby spinach for a milder drink, although that changes the original two-greens combination. If kale is the ingredient you enjoy most, keep the original balance first rather than doubling it on the first attempt. Removing the ribs and using ripe mango will do more for the texture and flavor than adding several unrelated ingredients.

Unsweetened vanilla soy milk works, but the result will be less sweet if your usual beverage contains added sugar. Plain soy milk also works if you are happy to lose the vanilla note. Other plant beverages change the flavor and body, and their ingredients vary, so check the label if you need a soy-free version. These are substitutions, not ingredients in the video.

For other mango preparations, try my homemade mango sorbet. If you want strawberries to be the main flavor instead, my homemade strawberry sorbet is a separate dessert recipe. Do not assume a frozen dessert recipe and a drink use the same fruit-to-liquid proportions.

Frequently asked questions

Why does my smoothie taste too grassy?

Check the measurements, especially the kale. Weigh it after removing the ribs and use sweet, ripe mango. Unsweetened soy milk will also leave the greens more noticeable. Blend thoroughly, then taste. Adding more greens by eye can overwhelm the small amount of fruit in this recipe.

Why are there pieces of kale in the glass?

The ribs may not have been removed, the leaves may need finer slicing, or the blender needs more time. Stop it before checking or scraping. Tiny flecks are expected; tough strands are not. A blender with limited power may also need the mango to soften slightly before it can process the batch well.

Can I prepare it ahead of time?

The best result is freshly blended, while the mango is cold and the texture is even. You can wash, dry, and portion the greens ahead, and keep the mango pieces ready in the freezer. If saving the finished drink, refrigerate it promptly in a covered container and stir or shake before serving. Some separation is normal; leaving it on the counter is not the way to keep it ready.

Is this a complete breakfast?

It is one generous drink, and whether it is enough for you depends on the rest of your meal. For a more substantial breakfast, serve it with banana chocolate chip muffins, easy homemade pancakes, or a soft French omelette. Those recipes are accompaniments; they do not need to go into the blender.

What else can I serve alongside it?

A fruit and granola cottage cheese parfait or cottage cheese fruit salad gives you a different texture beside the drink. For a leisurely brunch, try French toast with maple syrup or homemade crepes. Choose the accompaniment to suit the occasion and keep the smoothie itself simple.

Notes

Use the kale leaf weight after removing ribs. Partly frozen mango gives a cold, creamy result without ice. The original version uses vanilla soy milk; sweetness depends on the brand and mango. Contains soy. Choose a dairy-free soy beverage to keep the drink dairy-free. The English cup amount is rounded from the video’s 300 ml. Blend time depends on the appliance; use texture as the endpoint.
