Greek Shrimp Skewers with Lemon Oregano Dressing

These Greek shrimp skewers bring together large shrimp, fresh oregano, lemon juice, and olive oil. A short rest gives the seafood a bright herbal coating, then a hot barbecue adds light browning. Serve them with mesclun dressed with a clean reserved portion of the same lemon dressing. The result is a simple seafood meal with very little cooking time and plenty of freshness.

The recipe follows the method in my video, with practical measured amounts for three light main-course portions. Large shrimp are worth choosing here: they are easier to thread, turn, and remove from the grill before they become dry. Have the salad and serving plates ready before cooking, because the final stage moves quickly.

Why lemon and oregano work with shrimp

Lemon gives the dressing acidity, while olive oil carries the oregano flavor and coats the shrimp. The dressing uses three parts oil to one part lemon juice, following the ratio shown in the video. It should taste bright without covering the natural sweetness of the seafood. Blending disperses the herb through the liquid, although it may separate again after standing. Shake or whisk it before each use.

Greek oregano has a strong, savory fragrance. Strip the leaves from the tougher stems before blending so the dressing stays smooth. Choose the right shrimp

The video uses raw Argentine shrimp marked 16–20, which describes an approximate count per pound. Choose fifteen large peeled and deveined shrimp of similar size, about ¾ to 1 pound altogether depending on the actual pack. Five shrimp per person makes a light meal when served with salad; add a substantial side if you want a larger dinner.

Frozen raw shrimp work well. Thaw them in the refrigerator, drain, and pat them dry before adding dressing. Water clinging to the seafood dilutes the seasoning and increases dripping on the barbecue. Do not substitute cooked shrimp for the raw shrimp in the written method: heating them for the same length of time would make them tough.

Some Argentine shrimp are pink even before cooking, so color alone is unreliable. Cut into a thick shrimp if needed and check that the center is opaque and firm, rather than translucent. The flesh should remain juicy. Very tight curls and a rubbery bite usually mean the shrimp stayed on the heat too long.

Prepare the shrimp skewers step by step

Squeeze and measure the lemon juice

Squeeze fresh lemons and strain out the seeds. Measure 2 tablespoons juice for this smaller batch. Lemon size and juiciness vary, so measuring is more reliable than writing a fixed number of lemons. Keep another lemon for serving; plain wedges are just as useful as the decorative lemon shape shown in the video.

Fresh juice gives a cleaner flavor than a strongly preserved bottled juice. Taste a drop before making the dressing, especially if the lemons have been stored for a while. Blend the oregano dressing

Put the lemon juice, fresh oregano leaves, salt, and pepper in a narrow blending cup. Blend briefly, then pour in the olive oil and blend just until dispersed. Taste now, before any dressing touches raw shrimp. The measured recipe uses 6 tablespoons olive oil with the 2 tablespoons lemon juice.

Immediately transfer 3 tablespoons of this clean dressing to a separate covered container for the salad and finishing. Use the remaining dressing for the raw shrimp. This separation matters: dressing taken from the raw-shrimp bowl must not be poured onto cooked seafood or salad. Refrigerate both containers while you prepare the rest.

Coat and chill the shrimp

Place the dried shrimp in a bowl and turn them with the remaining dressing. Cover and refrigerate for 20 to 30 minutes. The video leaves them about an hour; a shorter rest is a practical choice for peeled shrimp because the lemon can gradually change the surface texture. Avoid an overnight rest in this acidic mixture.

Thread evenly sized skewers

Thread five shrimp onto each of three metal skewers, piercing each shrimp in two places so it stays secure when turned. Arrange them in one layer without compressing them into a thick bundle. Let excess dressing drain back into the bowl, then discard the dressing that touched the raw shrimp.

Metal skewers are convenient on a barbecue. If you prefer wooden ones, soak them for 30 minutes and keep the bare ends away from direct flame. Two parallel thin skewers can help prevent the shrimp from spinning. Prepare a clean plate and clean tongs for the cooked seafood before you start grilling.

Grill briefly and check the center

Preheat a barbecue or grill pan over medium-high heat. Clean the cooking surface and oil it lightly. Place the skewers on the hot surface and cook about 1 to 2 minutes per side as a starting point, adjusting to the shrimp size and actual heat. Turn once the first side releases easily. A grill pan works indoors, although browning may take a little longer.

The video demonstrates roughly 30 seconds per side on a very hot grill. Treat that as footage of that particular setup, rather than a universal timer. Check the thickest shrimp: the center must be opaque and firm. Remove the skewers promptly when ready. Oil can cause flare-ups, so move the skewers away from active flames instead of letting the coating burn.

Dress the greens and serve

Toss the mesclun with 2 tablespoons of the clean reserved dressing just before serving. Divide it among three plates. Slide the cooked shrimp off the skewers if desired and spoon the remaining tablespoon of clean dressing over them. Add lemon wedges and serve immediately while the shrimp are hot and the greens crisp.

Substitutions and serving options

Use 1 teaspoon dried oregano in place of 1 tablespoon fresh oregano leaves. Let the dressing stand for a few minutes before tasting so the dried herb can soften. Smaller shrimp can be used, but reduce the cooking time and use more shrimp per serving. Larger shrimp need closer checking at the thickest part.

Baby spinach, arugula, or a mixed lettuce blend can replace mesclun. Edible flowers are optional; use only flowers sold or grown specifically for eating. Make ahead and leftovers

Make the dressing earlier the same day and refrigerate it. Prepare the salad separately and wait until the final 20 to 30 minutes before coating the shrimp. The oil may thicken in the refrigerator; whisk the dressing again before dividing and using it. Keep raw shrimp chilled until cooking.

Refrigerate cooked leftovers promptly and use within 2 days. Store them separately from undressed greens. Reheat briefly and gently until hot throughout, or serve the refrigerated cooked shrimp cold in a fresh salad. Repeated heating makes shrimp tougher, so warm only the amount you plan to eat.

Frequently asked questions

Can I cook these without a barbecue

Yes. Use a hot grill pan or heavy skillet in a ventilated kitchen. Cook in a single layer and check the center rather than trying to reproduce outdoor grill marks.

Why did the dressing separate

Oil and lemon juice naturally separate without a strong emulsifier. That is normal for this recipe. Shake or blend again before using, and do not add mayonnaise or mustard unless you intentionally want a different dressing.

Can I use the leftover marinade as a sauce

Only the portion reserved before contact with raw shrimp is ready to use as a dressing. Discard what remains in the raw-shrimp bowl. Reserve enough clean dressing at the beginning so there is no need to reuse it.

Why are my shrimp chewy

Overcooking is the common cause. Too much time in lemon juice can also alter their texture. Use a short refrigerated rest, an evenly heated cooking surface, and remove the shrimp as soon as the centers are cooked.
