Easy Salmon Sushi Bake with Spicy Mayo

This salmon sushi bake has warm seasoned rice, tender flakes of salmon, a creamy spicy topping, and a layer of furikake that gives every scoop the flavour of a sushi roll without having to roll anything. I make the salmon mixture creamy enough to spread but not so loose that it disappears into the rice, and the main mistake to avoid is overbaking it after assembly. What I look for is a lightly browned top with a hot, moist centre and rice that still holds its shape.

Ingrédients
  

  • 1 1/2 cups short-grain sushi rice
  • 1 3/4 cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 pound skinless salmon fillet
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese softened
  • 1/3 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 3 tablespoons furikake divided
  • 3 green onions thinly sliced
  • Roasted nori sheets for serving

Instructions
 

  • Rinse the sushi rice thoroughly, drain, and cook with the water according to package directions.
  • Combine rice vinegar, sugar and 1 teaspoon salt, then gently fold into the warm cooked rice.
  • Heat the oven to 400°F. Season the salmon with 1/4 teaspoon salt and black pepper and bake for 10 to 14 minutes, until moist and easily flaked.
  • Cool the salmon slightly and break it into medium flakes.
  • Mix the cream cheese, mayonnaise, sriracha, soy sauce and sesame oil until combined, then gently fold in the salmon.
  • Lightly grease an 8-inch square baking dish and spread the seasoned rice evenly across the bottom.
  • Sprinkle half the furikake over the rice, spread the salmon mixture on top, and finish with the remaining furikake.
  • Bake for 10 to 12 minutes, until the centre is hot and the topping is beginning to brown.
  • Broil for up to 1 minute if additional browning is desired.
  • Rest for 5 minutes, garnish with green onions, and serve warm with roasted nori.

Notes

Avoid compacting the rice too firmly and do not overbake after assembly. Add extra spicy mayo at serving time if desired.
