This easy blended vegetable soup turns leeks, potatoes, carrots, turnip, and onion into a smooth, practical potage with a fine vegetable garnish. It works because the vegetables are cooked until completely tender while the julienne garnish is prepared separately, and the main mistake to avoid is blending the potatoes too long, which can make the soup gluey. The soup is ready when it pours in a thick ribbon but still settles easily in the bowl.

This is the kind of soup I make when I want to use basic vegetables without hiding them under too much cream or seasoning. Potato gives the potage its body, leek and onion build the savoury base, and carrot softens the sharper taste of the turnip. It is warming enough for winter but light enough to serve as a starter throughout the year.

What Makes This Vegetable Soup Different

This recipe is based on my YouTube video about peeling vegetables and making several classic cuts, with a few adjustments since publication. The original video is mainly a cooking-course demonstration rather than a measured recipe, so this version gives the soup exact proportions, a clear yield, and dependable cooking times.

The fine carrot and turnip garnish does not cook for the full length of the soup. I cook it separately for only a few minutes so the strips stay visible and retain a little texture.

I also prefer to soften the onion and leek briefly in butter before adding the broth. I make it this way because gentle cooking removes the raw onion smell and gives the finished potage a rounder flavour without browning the vegetables. This is not a heavy cream soup. The potato supplies most of the body, and the cream remains optional.

Ingredients You Need

Leeks and onion: These form the aromatic base. Leeks can hold soil between their layers, so clean them carefully. What I look for in the pot is a mild onion aroma and a glossy appearance, not browned edges.

Yellow potatoes: Yellow-fleshed potatoes make the soup creamy without much dairy. Russets also thicken it, but they become gluey more easily when overblended.

Carrots and turnip: Carrot adds sweetness and colour. Turnip adds an earthy, slightly sharper note, but too much can dominate the soup. Keep the turnip below the amount of potato and carrot.

Broth: Low-sodium chicken or vegetable broth both work. A homemade vegetable stock keeps the flavour clean and makes the soup vegetarian.

Butter, cream, salt, and pepper: Butter softens the aromatic vegetables. Cream is optional and should be added only after blending. Season lightly at first because the broth may already contain salt.

Step-by-Step Instructions

1. Prepare the vegetables

Clean the leeks thoroughly and prepare the onion, potatoes, carrots, and turnip. Keep the vegetables for the soup in fairly even pieces so they soften at about the same rate. Reserve a small amount of carrot and turnip in very fine strips for the garnish.

2. Soften the onion and leek

Melt the butter in a large saucepan over medium-low heat. Add the onion and leek with a small pinch of salt. Cook for 4 to 5 minutes, stirring occasionally.

The vegetables should soften and look glossy. If they begin to brown, lower the heat. Browning changes both the colour and the clean flavour of this potage.

3. Simmer the soup

Add the potatoes, carrot pieces, and turnip pieces. Pour in 4 1/2 cups of broth, keeping the rest for later. Bring to a gentle boil, reduce the heat, and simmer partially covered for 20 to 25 minutes.

You know the vegetables are ready when a potato piece crushes easily against the side of the pot with a spoon and the turnip has no firm centre. Do not blend undercooked vegetables. The texture will stay grainy.

4. Cook the garnish separately

While the soup simmers, bring a small saucepan of lightly salted water to a boil. Add the fine carrot and turnip strips and cook for 3 to 4 minutes.

The garnish should bend easily but still hold its shape. Drain it immediately. Leaving it in hot water will make it limp and dull.

5. Blend and adjust the texture

Remove the soup from the heat and blend only until smooth. At this point, it should coat a spoon but still pour easily. If it is too thick, add the reserved broth a little at a time.

The mistake to avoid is blending for several minutes. Once cooked potato is smooth, continued blending can make it sticky. If the soup is too thin, simmer it uncovered over low heat instead of adding more potato after blending.

6. Finish and serve

Stir in the cream, if using, and warm the soup gently. Taste, then adjust the salt and pepper.

Spoon the potage into warm bowls and place a small mound of carrot and turnip garnish in the centre. It should remain visible on the surface. Serve with toasted bread, croutons, or a simple salad.

Three Details That Matter

First, potato should remain the main thickener. Turnip adds character, but it should not take over the bowl.

Second, start with slightly less broth than you may need. It is easy to thin the soup after blending and much slower to correct a watery potage.

Third, stop blending as soon as the texture is even. A smooth soup does not need several minutes in the blender.

Storage and Reheating

Cool the soup and refrigerate it in a covered container for up to three days. Store the julienne garnish separately so it does not soften in the potage.

Reheat over low to medium-low heat, stirring often. Potato-thickened soups usually firm up in the refrigerator, so add a splash of broth or water until the soup pours easily again.

The soup can be frozen without the cream and garnish for up to two months. Thaw it in the refrigerator and reheat gently.

Substitutions

Vegetable broth can replace chicken broth, olive oil can replace butter, and the cream can be omitted. Russet potatoes can replace yellow potatoes, but blend them sparingly. Rutabaga can replace turnip, although it is sweeter and may need a little longer to soften. Parsnip also works, but use less because its sweetness is more noticeable.

Can I make this soup without cream?

Yes. The potatoes provide enough body. Leave out the cream and adjust the final consistency with broth.

Why did my soup become gluey?

The potatoes were probably blended too long. Blend only until smooth, then stop. Russets are especially likely to become sticky.

Does the garnish need to cook separately?

Yes, for this version. Separate cooking keeps the fine carrot and turnip strips visible and prevents them from disappearing into the blended soup.

Can I use only leeks and potatoes?

Yes, but the result becomes closer to classic potage Parmentier and will not have the same sweetness or turnip flavour.

What can replace turnip?

Rutabaga, parsnip, or extra carrot can work. Rutabaga may need longer to cook, while parsnip makes the soup sweeter.

Why is my soup too thin?

Too much broth was added before blending, or the vegetable quantities were reduced. Simmer the blended soup uncovered over low heat until it thickens.

Can I freeze it?

Yes. Freeze it before adding cream and keep the garnish separate.
