Braised Beef Short Ribs with White Beans

Cold weather cooking needs patience. This braised beef short ribs recipe is based on my YouTube video, with a few adjustments since publication to make the timing and proportions more reliable for home kitchens. The biggest change is simple: instead of trusting the clock too much, cook the beef until it is truly tender.

This is a hearty winter-style beef and bean dish made with seared short ribs, white beans, red onion, carrots, mushrooms, red wine, and beef broth. It is different from a quick skillet beef recipe because the whole point is slow cooking: the meat becomes gelatinous, the beans absorb the broth, and the sauce reduces into something deep and comforting. The mistake to avoid is boiling everything hard and stopping too early. You know it is ready when the meat almost pulls from the bone and the beans are tender without falling apart.

What Makes This Recipe Different

This is not a fast beef dinner like beef tips with gravy or a creamy pan dish like beef stroganoff with mushrooms. It is closer to an old-fashioned braise, but with white beans cooked alongside the meat instead of potatoes or pasta.

I make it this way because the beans do something useful: they soak up the beef broth and wine reduction while still keeping their own texture. Short ribs give the sauce body because of the bones, fat, and connective tissue. When the cooking is done properly, the sauce does not need cream or flour. It should feel naturally rich.

I also prefer to cook the beans and beef separately at first. Beans do not always cook at the same speed, especially if they are older. Keeping them in their own pot gives more control. At the end, everything can meet on the plate with the jus spooned over the top.

Ingredients You Need

The beef is the center of the dish, so use meaty short ribs if possible. You want about 4 to 5 lb total for 6 generous servings. If the ribs are very small, the cooking time may be shorter. If they are thick and meaty, expect closer to 2 1/2 or 3 hours.

For the beans, use dry white beans that have been soaked overnight. Navy beans, cannellini beans, great northern beans, or white kidney beans all work, but the cooking time can change. Fresh dry beans cook faster. Older beans can take much longer, even after soaking.

The vegetables are simple: red onions, baby carrots, and button mushrooms. The onions give sweetness, the carrots make the dish feel complete, and the mushrooms add a darker, earthy flavor that works well with the wine. Garlic butter is used in the video, but regular butter with minced garlic works just as well.

Use low-sodium beef broth if you can. This matters because the liquid reduces as the dish cooks. If the broth is already salty and you add too much salt early, the final sauce can become too salty. I prefer to season near the end, taste, then adjust.

If you like braised beef dishes, this sits in the same comfort-food family as Dutch oven pot roast and oven-baked beef brisket, but the white beans make it more rustic and stew-like.

Step-by-Step Instructions

Start the day before with the beans. Cover the dry white beans with plenty of cold water and leave them to soak for about 12 hours. They will swell, so use a bowl with extra room. The next day, drain them and rinse them well.

Put the soaked beans in a pot and cover them with cold water. Bring to a boil and cook for about 5 minutes, skimming the foam from the top. This first boil cleans up the beans and removes some of the cloudy foam. Drain them, rinse with cold water, and put them back into a clean pot.

Prepare the vegetables before starting the beef. Slice the red onions, clean the mushrooms, and keep the carrots ready. This recipe is easier when everything is next to the stove because once the beef is browned, the pan moves quickly.

Place the short ribs in a cold heavy pan or Dutch oven, fat side down when possible. Turn the heat to medium-high and let the beef fat render slowly. What I look for here is a steady sizzle and a good brown color. Do not rush this stage. The browned bits in the pan are part of the sauce.

Turn the ribs and brown them on all sides. Do not salt and pepper them heavily at this point. The broth and wine still need to reduce, and seasoning too early can make the final sauce hard to control. Once the meat is nicely browned, remove it to a plate.

Add the red onions to the same pan. Let them soften and pick up a little color. If the pan looks dry, add a spoonful of duck fat or a little oil. Add the carrots, then the garlic butter, then the mushrooms. Stir and let the mushrooms release some of their moisture. At this point, the pan should smell like browned beef, garlic, and wine waiting to happen.

Divide some of the vegetables into the bean pot and leave the rest in the beef pan. This gives both parts of the dish flavor. Put the short ribs back into the pan with the remaining vegetables.

Pour in the red wine and scrape the bottom of the pan. Let the wine reduce for a few minutes. The smell should go from sharp and alcoholic to deeper and rounder. This reduction is important. If you add broth too soon, the sauce will taste thinner.

braised beef short ribs with white beans, step 4

Cover the short ribs with beef broth, just to the top of the meat. Cover the beans with beef broth by about 1 inch. You may not need every drop of broth right away. Keep extra nearby in case the beans absorb too much during cooking.

Bring both pots to a gentle simmer. Do not hard-boil the beef. A slow bubble is better. Cook the beans for 1 to 1 1/2 hours, or until tender. Cook the beef for about 2 to 2 1/2 hours, or longer if needed, until fork-tender. Smaller ribs may be done earlier, but tenderness is the real test.

After about 1 hour of cooking, start seasoning. Add some salt and black pepper, then taste again near the end. If using regular salted broth, go carefully. If using unsalted broth, you will need a little more.

When the beef is tender, skim excess fat from the top of the sauce. Short ribs release a lot of fat, and skimming makes the dish taste cleaner. The sauce should be rich, glossy, and reduced enough to coat the meat lightly.

braised beef short ribs with white beans, finished dish

Serve the beans in a deep plate or shallow bowl. Add one or two short ribs, some carrots and mushrooms, then spoon the beef jus over the top. The best bite is a little bean, a little sauce, and a piece of gelatinous beef together.

What to Serve With It

This dish already has beans, vegetables, and meat, so it does not need much. A simple salad helps balance the richness. I like something crisp like romaine and endive green salad or a sharper side like marinated red cabbage salad.

If you want a bigger meal, serve it with traditional gratin dauphinois and keep the portions smaller. For a soup-first winter dinner, minestrone soup with pasta and beans stays in the same rustic direction, although I would serve small bowls because the main dish is filling.

For more beef dinner ideas, the broader easy beef recipes for weeknight dinners collection is useful, while French beef recipes and bistro classics is the better place for slower, richer dishes.

Substitutions

Use canned white beans if you need a shortcut, but do not cook them for the full bean time. Drain and rinse them, then warm them gently in beef broth with some of the vegetables near the end. The texture will be softer and the flavor will not be quite as deep, but it works.

Use chuck roast pieces if you cannot find short ribs. The flavor will still be good, but you will lose some of the bone-in richness. If using boneless beef, cut it into large pieces and cook until tender.

Use yellow onions instead of red onions. Red onions bring a little sweetness and color, but yellow onions are completely fine in a braise.

Use regular butter and garlic instead of garlic butter. About 2 tablespoons butter with 2 to 3 minced garlic cloves is enough. If your garlic butter is salted, reduce the added salt.

Use chicken broth only if you must. Beef broth gives a deeper result. A homemade-style stock, even a simple one like homemade chicken bouillon cubes, is better than plain water, but beef broth is still the first choice here.

For a different beef direction, something like beef burritos with seared steak is quicker and brighter. This recipe is heavier, slower, and more about the sauce.

FAQ

Can I make this recipe ahead of time?

Yes. Braised short ribs are excellent made ahead. Cool the beef and beans separately, refrigerate, then reheat gently. The next day, it is easier to remove the hardened fat from the top of the sauce.

Why are my short ribs still tough?

They need more time. Short ribs become tender when the connective tissue has had enough time to break down. Keep simmering gently until the meat is fork-tender. Do not turn the heat high to force it.

Can I cook everything in one pot?

You can, but I prefer not to. Beans and beef do not always finish at the same time. Cooking them separately gives better control and avoids overcooked beans or undercooked beef.

Can I use canned beans?

Yes. Add canned beans near the end and warm them in the broth. Do not simmer them for 1 hour, or they may break apart.

How salty should the broth be?

Start lightly. The broth reduces, the beans absorb liquid, and the sauce concentrates. Taste near the end before adding more salt.

Can I freeze it?

The beef freezes very well. The beans can freeze too, but they may soften after thawing. Freeze in portions with some sauce so the meat stays moist.
